I have loads of milk due to expire, what do I do with it? I'm no Nigella, so I need something easy, simple, quickly and yum.

Pork boiled in milk....yummy italian recipe. Get pork shoulder (traditionally done with pork loin, but I find they are too dry these days) tied up. Put a little oil in the bottom of a large pot, heat up, add rosemary. Brown pork shoulder on all sides (a few minutes per side). Add milk until pork shoulder is completely covered with milk. When milk comes to a boil, reduce temperature to a simmer (careful not to burn milk at bottom of pot). Add salt and pepper. Boil for 2+ hours. Turn shoulder every so often so it cooks evenly. Milk will boil down and turn slightly caramel color and eventually look lumpy and curdley (sorry doesn't sound great...but tastes amazing). I usually take meat out near end and finish boiling down of milk without meat in pot as it's hard to stir and keep it from burning with lump of meat in the middle. Serve pork sliced with spoonfuls of milk sauce. It's one of my kids' favorite dishes. (Freezes nicely too).

Milk can be frozen.

Or make a big batch of white sauce and freeze in portions. Can then be defrosted and used simply as a bechamel sauce, or add cheese etc

If it goes off, you can make paneer. Bring the milk upto simmering point, add 1/4 cup of white vinegar or lemon juice or 1/2 cup natural live yoghurt. Turn off heat and cover for 5 minutes - greenish liquid should separate from the milk solids. Drain in a cheesecloth or sieve lined with 3-4 layers of kitchen towels. Use the paneer in a curry or just like ricotta. Or mix the crumbly paneer with chopped spring onions, coriander, salt and pepper, use the mixture to make toasties.
