It was on a thread about easy meals to cook for a lot of people and someone suggested chicken breads, tomato pesto, creme fraiche and to serve it with cous cous/rice etc. I have bought all the ingredients I can remember but I can't find the original post to tell me what to do with it.

Can anyone help before everyone gets cooked yet another random meal by me?!

Thanks but I don't think so unless she had adapted it but that could work if I can't find the original. I don't think there were any peppers in it.

P.S. I'll bump the original thread for you, think I can manage that despite my technological incompetence...

I copied this one from another thread for tea tomorrow - even remembered to get the red pesto (but forgot the greek yoghurt! Blush)

Chicken in Red Pesto Sauce (recipe I have serves 4, but just double/triple quantities) - very quick (takes no more than 25 minutes in total), v tasty, foolproof, can serve with rice/mash/couscous/pasta and salad or a green vegetable:

4 chicken breasts (skinless)
200ml chicken stock
3 tablespoons red pesto
3 tablespoons tomato puree
150ml Greek yoghurt (ie one small pot)
Olive oil

Heat some oil, fry the chicken breasts until browned (might need to do this in batches if cooking for 10). Meanwhile mix the stock, tomato puree and red pesto together, pour into the pan. Cover and simmer for 20 minutes. Stir in the yoghurt and heat through gently without boiling. Serve.

Thanks everyone! That is the one. Although I am not making it tonight as I feel poorly and the DC have had leftovers from yesterday. Just as well as I bought creme fraiche instead of yoghurt!

I'm sure it'll be fine with creme fraiche too!
