Florentine - bed of spinach with white sauch over the top.

Benedict - toasted muffin, smoked haddock with hollandaise sauce over the top.

Fiofio--well, i buy it for my kids, 'cause they eat kedgeree. But I've too much (and, yes zippitippietoes it's nice haddock from a fish monger) and would like to eat some if ut myself tonight, but I don't eat kedgeree. I've only started eating smoked haddock since I moved to England. . .it's not something we tend to eat in the US. But I quite like it.

These other suggestions sound great, everyone, thanks.

That sounds yummy, zippie. . .and I knew exactly why you asked. . .and often I do get the rubbishy flourescent yellow stuff, but this time didn't. Your suggestion is v. tempting, by the way. . .but not sure I've the right ingredients. Sad

love it love it.

Lightly cook the fish in milk, drain the milk and keep.

Flake the fish into a shallow dish and put on a layer of sliced skinned tomatoes.

Saute a chopped onion, add flour and the milk to make an onion sauce and add about 3oz of strong cheddar.

Pour sauce over the fish/tomato and sprinkle with some grated cheese. Put into the oven and cook till toasty and bubbly on top.

Serve with saute pots and some veg.

God I could kill for this right now.....

Lightly grill it, dotted with butter. Eat accompanied by nothing but brown bread and butter.

If you have to do something with it, fishcakes are good.

Smoked haddock risotto? You need risotto rice, a few mushrooms, half a red pepper, one clove garlic, an onion, some frozen peas, and some veg or chicken stock. Saute onion and garlic in oil or butter, add rice to coat well, then other veg except peas, add stock gently the way you normally do, add haddock and peas at the end when consistency is right.

It's in an old cookbook I have 'The Dairy Book of Family Cookery', so obv every recipe is heavily laden with dairy produce! It's called 'Haddock Savoury'and the recipe also included 4 rashers of chopped bacon - have never bothered myself.

It really is delicious.
