What baked goods freeze well?
How long do things take to defrost roughly?

Can I freeze:

Flapjacks?
Banana bread?
Fairy cakes?
Homemade bread?

Any other tips/advice gratefully recieved.

We keep our massive freezer (upright)at -10 degrees below Zero, just so we
can Freeze our Baked Goods.What Doesn't Fly is: Pasta Dishes (runny),and any-
thing with Eggs in it (Breads are okay).Say,you want to freeze a cooked meat-
loaf...that sucker will taste Flat if Frozen over a week.Don't know Why.Basically
we freeze everything else.We found out over the past 15 years, that Cooked
Goods like-Casseroles go Flat,Unless the Meats are Top Quality.So we purchase
All of our meats at the same place the local restaurants buy from.Jill.

Hi thanks for the reply. I freeze leftover dinners already but I didn't think about freezing cakes. It would be such a help.

I freeze in small portions and space everything out. So I'd freeze a batch of fairy cakes on a tray and then bag/ box so you can just defrost the number you need.

breads I slice and either freeze individual slices, if they can be toasted from frozen or in useable quantities of three or four slices. I find they turn quicker once defrosted so where a fresh loaf is fine for several days a defrosted frozen one really needs using on day of defrost.

Cakes I slice and turn top to tail interleaved with grease proof paper then bagged in pairs. Again I freeze spaced on a tray ten bundle when frozen into the draw - stops horrible squished mess.

I tend to batch cook things like muffins, currant buns, tea loaves etc, basically anything without icing & freeze individually in bags. Pack up in the morning & by lunchtime they're defrosted Smile

How about just freezing one of things as a test? I have frozen un-iced cakes before and actually i've also frozen butter icing, so i guess the two together would be fine...

Imo any bread/cake etc is not quite as fresh as not frozen, but fresher than stuff made a couple of days ago eg if i make bread i'd eat it that day or the next, but anything that was going to be around longer than that would go in the freezer. Hope that makes sense...

Freezing slices between greaseproof paper is a great idea. So is freezing sliced of bread I wouldn't have thought of that.

They defrost pretty quick then. That's good to know.

(What phone are you on? If Android I highly recommend SwiftKey, it learns the words you say so if you MN a lot it'll quickly pick up YABU and fanjo and other useful words...)

Nicky, that's what I was thinking of doing, batch cooking at the weekend and then its all done and there is also no waste
