Smoked haddock - cooking suggestions?

So, I've got some fillets of smoked haddock. What is the best way to cook them? Poach them in milk? Something else?

Would be great if you could share suggestions....with quantities and cooking times/temps if poss.

Poached in milk is nice. They don't take long - ten mins prob. I like kedgeree for smoked haddock. Boil in water for ten mins, then flake. Mix together cooked rice, fish, hardboiled egg and peas. (That was rather idly off the top of my head without looking up proper recipe Grin but you can google kedgeree for a more professional recipe).

Love poached haddock in milk with brown bread & proper butter on the side ( reminds me if tea at my lovely grandmas as a child)!

How much milk do you think....enough to cover fish? I've read about poaching it gently, i.e. just about simmering...would you say that's right?

Tried making a kedgeree before, was ok, a bit dry though - not sure what went wrong. But haven't got big fans of hardboiled eggs or peas here!

Just been reading Delia's 'thoughts' on poaching fish lol Not the biggest Delia fan though

Cullen skink- it's like a smoked haddock stew/soup type thing.

Melt some butter in a lidded pan. Put in some onion and leek in and sweat for about ten minutes. Add about half a litre of whole milk and some diced potatoes. Cook with the lid on until potatoes are soft.

Take off the heat and add chopped smoked haddock and let it cook with the lid on for five minutes.

Serve with parsley on top and grated cheddar.

Fry off some leeks, add in a tin of butterbeans (drained) then a bit of chicken stock, not enough to cover, just enough to keep it moist. Put the haddock on top and put a lid on and let the haddock steam through for 10 mins til hot. Effectively the fish is already cooked so you are heating it up. Take the fish out and set aside. You'll know if it's cooked because the skin should come off very easily. Add a teaspoon of mustard and a dollop of double cream or creme fraiche. Lovely one pot dinner. And the beans count as one of your 5 a day!
