Macaroni cheese to make ahead

Does anyone have a good recipe I can make one evening to be chucked in the oven the following day?
I've never made it at all but trying to use up what's in and I have lots of cheese and a bag of maceroni so seems obvious!

Grate all your cheese - a whole big block of mature cheddar like Cathedral City. Cook macaronis in boiling water for ten mins. While that's happening, melt about 50g of butter in a pan. When melted pour in 1.5 pints of milk, then chuck in most of your grated cheese - save some to stick on top of dish. Warm gently, and just before it starts to simmer, pour in a mixture of 3 teaspoons of cornflour mixed with a tiny amount of cold water - just enough to make a runny paste and no more. Stir pan until sauce starts to bubble - let it bubble gently and thicken for no more than a minute. Take off the heat. Drain pasta in a colander, leaving a tiny amount of the cooking water, tip pasta back into pan. Pour all the sauce on to the pasta and mix well. Tip whole lot into a big casserole dish and cover with remainder of grated cheese. Cover, leave to cool, bung in fridge til needed. Bake in oven 200 degrees for 30 - 40 mins.

To make it more interesting, when you're melting the butter, fry some chopped bacon or ideally pancetta and spring onions. Or use a mix of different cheeses. I like loads of grindy black pepper in the sauce, too, and a teaspoon of mustard.

I agree I've faffed about with proper white sauce like I'd do for cauliflower cheese, but cornflour seems to be better on macaroni.
