Right, we've had ratatouille, pasta, courgette and seed muffins and courgette soup. About 2.5 kg of courgettes are still staring at me from the kitchen top.

Any suggestions for fantastic courgette recipes?

Delias carrot cake made with courgettes rather than carrots. Works well, and is delicious without the icing gunk on top. Freezes well too.

I've done chocolate and courgette cake, hidden them in pasta sauce, a kind of potato and courgette gratin thing - layered with onion, salami, onion and sliced potato with cheesy sauce....
and still haven't used half of the ton MIL generously bestowed on us!

I shall try it all eventually I expect.
They seem to be the one thing that have done really well this year so I'm a bit loathe to give them away. Like the idea of a gratin thing. My family will eat anything with enough cheese in. Might put my solitary home grown cauliflower in as well.

We had a similar problem with a glut of courgettes, and then someone at work brought in courgette spaghetti for their lunch. It was delicious, so I made it at home. Ideally if you have a julienne peeler it makes really good thin spaghetti like strands. If you don't have one, then you could use a vegetable peeler to make thin ribbons instead. So peel your courgettes, skins and all until you have a pile. Add them to a bowl and sprinkle with a little salt. Leave for about 15 minutes, and then squeeze off the excess water. Now all you do is add some olive oil, lemon juice, seasoning, and a teaspoon or so of green pesto. Serve it alongside grilled chicken or fish. Very healthy as there is no cooking involved.

If you have a big freezer, you can slice them quite finely and freeze. Freeze laid out flat in batches then transfer to a big bag.

Loads of ideas thanks we have also done so well this year and rbh there not my fab veg. Might quite like them in a cake though.

Have you tried friitters? Very easy, grate then mix in flour, egg, seasoning and fry in little cakes till golden. You can make tons of different versions, I like chilli in them but can do lemon, herbs even cheese.

I like them roasted. You can roast with other vegetables too, such as onions, peppers, and tomatoes. Drizzle with olive oil, toss to coat and add spices/herbs to your personal tastes.

Tried fritters tonight and they were mostly harmless, just needed a more generous handful of seasoning! Not well enough disguised for DD though!

Cut courgettes into slices, griddle or fry till tender, mix with buffalo mozzarella torn in shreds, lots of torn mint, sea salt and pepper. Eat with sundried tomatoes on focaccia.

Roast & freeze. They shrink to have their size when they're roasted, they taste delicious and you can mix them into pasta sauce and casseroles, I love roasted courgettes.

Courgette, basil and lemon spaghetti. It's really nice.

Chop four courgettes, fry with four cloves garlic; add lemon zest, juice of lemon, cayenne pepper, seasoning, splash of cream, torn basil leaves; add to cooked spaghetti.

Tried Meredith's Zucchini bread-well similar i found on-line.
Went down a storm. Didn't look promising until it was cooked though. Not the sort of mixture you scrape uncooked out the bowl, but lovely finished.

Soup was leek, potato and courgette- courgettes were the big ugly ones, but I was actually surprised how popular it was. DD 7 who usually picks them out of her pasta asked for seconds!!!

Need a courgette-free day tomorrow. Then roasted vegetables with couscous,I think and I like the idea of your spaghetti Marian. Have my own fresh basil ready tooSmile

Easiest in a rectangular dish.

rows of sliced potatoes, red Leicester cheese, tomato and courgette, repeat, like roof tiles in a single layer, bake.

Fiddly, but very pretty for veggi guests.

Jamie at home courgette carbonara - we have been eating it once a week since the courgettes were ready. Delish.
Or slice very finely into a frying pan (mandolin useful) fry in butter then add beaten eggs and cream with lots of black pepper and cook as you would an omelette. Grate loads of cheese on and finish under grill.

We eat a lot of Madhur Jaffrey's Prawn and Courgette curry in courgette season. You have to do her trademark 'prep everything before cooking' as it all goes together quickly, but it's nice and easy. Don't need weird spices either.

Abel & Cole do recipes by vegetable on their website for more inspiration. Fritters, maybe?
