What can I do with loads raspberries that doesn't involve a lot of sugar?

I have a prolific raspberry plant in the garden, the fruit it sweet and delicious but we can't keep up!

I don't just want them to go to waste when they are so lovely, but most raspberry recipes (jam, sorbet, pavlova, etc) require a lot of sugar, and I'm calorie counting at the moment.

Can anyone suggest a tasty thing to do with them that is waistline-friendly?

Use stevia instead of sugar.

Freeze some of the rasps for winter.

Or just eat them.

There is a lovely oaty crumble like recipe on mn, not waistline friendly though.

Smoothies? With yoghurt for breakfast?

I had loads earlier on, after the crumbles and baking I frooze them in crumble size and portion size for later in the year.

yy to the Vodka and vinegar - also think jam in a lovely jar with pretty labels - good presents

Also all these things will keep for ever in a dark place so you could make now to see you through til next season.

I know jam has lots of sugar in but you don't eat loads at one time.... usually

Freeze them. Thalen place in blender with low fat natural yogurt for a healthy frozen yogurt substitute

We freeze our excess - they freeze really well if you lay them out on trays only just touching and then bag them up when frozen.

Then you can have gorgeous rasps in the middle of winter - heaven!

I'm not sure if they have it in England, but you can buy pectin that doesn't need sugar to work and raspberries are pretty high in pectin already so you could make jam without adding sugar, or adding much less sugar. Also, it's a bit strange, but you can make jam with gelatin and not need to add sugar the consistency would just be a bit different. I personally enjoy sorbet, but do find you need to add sugar for a smoother texture, you can also add some form of alcohol to help with smoothness as alcohol won't freeze, if you want to reduce the sugar in a sorbet recipe.

I forgot to add that you could add another high pectin fruit in with the raspberries to help it set, such as apples, currants, or cranberries. Don't forget to add a bit of citrus as well which is also high in pectin. Hope this helps.

Ooh loads of ideas here, thank you! I am making some glittery Christmas jam in the week with all the plums and bramley apples we also have, so could potentially cook up the raspberries at the same time and try a low sugar/sugar-free jam.

Like the raspberry vodka idea too, and the frozen yoghurt. Mmm.

I will, and of course have, eaten loads already!
