Thai green curry?

Usually I just make paste, add chicken and coconut milk then serve with rice but I'm starting to feel this is a bit heavy on meat.

What veg can I add to bulk it out - I can't think what would go Confused

Baby corn, peppers, sweet potato, runner or broad beans in pods, thinly sliced carrots, courgette and water chestnut. Just about most things, really. Mmm, I fancy one tonight now. Grin

I put in a thinly sliced red pepper and some courgette. I sometimes serve it with a salad if shredded lettuce, salad opions and raw sugar snaps with a bit of thai seasoning which is v nice.

I put green beans, sugar snap peas, babycorn and new potatoes in mine so we only use 1 chicken breast between 2 people. I sometimes make it with white fish for a change.

I use baby corn, spring onions, pak choi, courgette and broccoli. Sometimes fling some mushrooms in that I've fried off first so they're not so soggy iyswim.

Thanks - I wanted to use aubergine but the store was all out.

I quite fancy green beans and baby corn, but wouldn't spinach, peas and courgette be a bit "English"

Baby corn and mange tout, possibly thinly sliced red pepper.

Oh yes, I use green beans too, forgotten that. I also use, if I have in the freezer, soya beans. Can you get the little pea aubergines where you are - they are very much a Thai ingredient and I sometimes get them when I remember to go to the market.

Frank I can get the aubergines that are about the size of an egg and have had them in a curry that someone else cooked for me.

I have also seen soya beans which I rather like but are more expensive than chicken

Yes, indeed they are expensive - however when I can be arsed I go up to Chinatown and get a sack of them, cook, pod and then freeze - they cost peanuts. But, I guess it helps that I am in London and can go to Chinatown easily I guess.

But it's interesting they're expensive in the uk also. I realise it makes no sense when living overseas but I have a real aversion to buying expensive products that would be a bargain in the UK

I hear you on that. We've been back in London for 11 months now, after 8 years abroad. It could be deeply frustrating at times when I wanted something that was so simple to get in the UK.

we normally have bamboo shoots in ours along with onions, mangetout/sugar snap peas, baby sweetcorn, carrots, peppers, etc
