A 'never fail' pizza dough...

Can anyone suggest a pizza dough to make from scratch- quickish which is great every time.
PS I can cook but have multiple baking disasters.....

I can't link as I'm on my kindle but I've been using the Jamie Oliver one from Jamie's Italy for years. It uses semolina which helps to make a crisp base, it always works.

I also use marble pizza stones and they do make a difference.

8oz strong bread flour (important it is bread flour)
1 sachet easy-blend dried yeast
good slug of olive oil
1 egg
salt
herbs (optional)
water to mix

If you have a food processor with a dough hook, add all the above except the water and start it going. Trickle in the water until it gathers into a lump, let it mix for another minute, then take out and finish by hand. If you don't have a food processor it's not too much more work to do it by hand. Important the finished dough is a soft, stretchy, smooth texture and not too stiff.

Roll and stretch out thinly - fits a typical pizza plate. Brush with oil and then add your toppings but keep them sparing. TIP... set the whole thing aside for 30 minutes before baking. This gives the dough base chance to rise.

I use 5 cups of strong white bread flour, 1 pack of easy blend yeast, 1 tsp salt, 1 egg and enough warm water to make the dough clean the bowl.

Let it prove for 45 minutes, the knock back and shape.

This provides 2 thick or 3 thin bases.
