Freezing cakes?

I'm having a tea party in a fortnight and stupidly invited many, many people. Just looked at what I want to bake and I don't have time for everything. I was thinking I could freeze muffins beforehand but I haven't done that before.

How does it work please? Do I just freeze them, wrapped well, and defrost on the day? Does the texture change at all? Most importantly, will people be able to tell that I'm a slattern?

Most cakes freeze well, shouldnt have any problems at all.

I frequently freeze cupcakes for DD and you'd never know. We just take them out in the morning and by the afternoon they're fine. Decorating them makes for a good rainy afternoon activity Smile

My friend always freezes her cakes - she reckons they are easier to decorate and stay moist.

I have never eaten a bad one yet. :)

I always freeze cakes for reason colleysmill describes.
