Help!! chicken recipes req'd for toddler!!!

Hello all!!! I am brand new to mumsnet and have had fun reading a few of the conversations etc (that is when my lo allows me too!!) However need help of my own ... my lo is 21 months old and is really a very good eater - the only thing is I really don't have any good chicken recipes or ways to do them for her! ANY suggestions would be extremely welcome ... thanks!! BTW where is spring??? Getting sick of cold damp days! Wink

This one always goes down a treat. Cut up some chicken breast into bitesize pieces, dip it in flour, egg, breadcrumbs and fry it in a little oil. Yip this weather and all the viruses that go with it are a drag!

Thanks Jzee ... Sounds like a plan for her dinner tonight ... I shall serve with noodles and peas!!! Much appreciated!! Too cold for the park today (and wet) so it's playdoh and drawing all pm ... lucky I kinda like these actities too aye??!!

Here's a recipe I made up today, approved by my toddler Wink.
Fry bite size pieces of chicken on med heat for 3-4 minutes, then add mushrooms, sun dried tomatoes and rosemary. Add pepper. Cook for 8-10 minutes and add creme fraiche. Boil for 2 minutes and serve over pasta (or rice). It's delicious!

MMMM - now that does sound good ... think I would have to share that one!!! however no sundried tomatoes or mushrooms at the ready today ... so will try that next time!!! Cheers for that fredly :)

Chicken or turkey for variety in olive oils and onion add carrots little bit of stock or soy sauce and add an apple in. yummy and i like to eat this with rice.

You could add in some mango chutney or apple juice.

Thanks for all the recipes - tis SO good to try new things for dd!! Question for fredly if you are reading this ... couldn't find any sundried tomatoes at the local Tescos (and too lazy to jump in car and go to Sainsburys - where no doubt I would end up spending 3 times what I intended too!!)BUT have sundried pesto in the fridge - do you think if I added it at the end with the creme fraiche (only a little bit) it would still be yummy enough for dd???

Az jzee but dip in yoghurt and crunched up cornflakes

Chicken in creme fraiche and a bit of mango chutney.

Fry chicken , put in casserole dish with peppers, mushrooms, add tin of chop toms and 2 stock cubes dissolved in 175mls of water, I think you can get low salt stock, if you prefer. Bung in some chopped parsly and bake in the oven for about an hour.

Fredly ... did the recipe!!! WOW - not only did dd gobble most of it up ... I had to help 'show her how' by making double and enjoying it myself!! We put the pesto in at the end - just after the creme fraiche and was a success!! Thanks again! Smile

I think the annabel karmel 1 pot chicken is nice and easy.

1/2 chopped onion
1/2 oz butter
1 mdm carrot sliced
10oz sweet potato chopped
10fl oz chicken stock (veg stick or water will do)
4oz chicken breast cut into chucnks.

Saute onion in butter until soft. Add chicken and saute for 3-4 mins. Add veg and pour over stock, bring to boil and simmer for about 30 minutes or until chicken cooked and veg tender. Puree or chop.

It's tasty!

I'd recommend her book. I know they're easy recipes and you can really cook anything for children, I just find it handy to refer too.

Hi DelGirl - Yes your recipe sounds easy and delictable!! Must admit - I do have an Annabel Karmel Book - Feeding your baby and toddler - but i do know she has quite a few on the go .. and I do think a lot of her recipes are good - however some I have tried are a bit fiddly, take a while to do and then makes too much (although I do freeze what i can!) However will definately give your suggestion a go!! I'll let you know how it goes down!!!Smile

TBH I just give DD (22 months) the same chicken recipes we have as a family. I will try and post some shortly but DD is on the lookout for me.
