Chicken thighs, lemon and thyme.

2 thighs per person (skin on), put in dish, cut 1 lemon per person in halfa nd squeeze over chicken, put lemons into dish also, put some fresh thyme under chicken, drizzle with olive oil, salt and pepper. Cover in foil, cook for 15 mins the. Remove the foil until crisp and cooked through.

Serve with salad and either couscous or crusty bread.

Nigella's spanish chicken and chorizo bake - delicious and all you need to serve it with is a green salad, and perhaps some crusty bread for mopping up the juices.

I just cook a bit of brocolli or other greens to go with either of the recipes above.

Tagine. Buy some Ras-el-hanout seasoning. Fry onions, peppers and chicken briefly, sprinkle on seasoning and chicken stock and bung in oven in a tagine/casserole/saucepan with lid. Olives and sliced preserved lemons are nice in it but not essential.

No idea of quantities but

sr flour, sugar, 3 eggs, butter, ripe bananas, nuts, raisins - throw the whole lot together in a bowl and mix then pour into a loaf tin and bake at 180 for 3/4 hour.

It also works well with apple.

Puff pastry rolls. Flour a board. Get a ready made piece of puff pastry, roll it out on the board till it's quite big, around 10 or 12" square. Spread toppings onto it like grated cheese, spring onion, chopped up ham etc. Roll up the pastry lengthways. Once it's rolled, cut it into 1" discs, lie the discs on a baking tray and bake in the oven for as long as the pastry needs (look on the packet). Works for sweet stuff as well, like mincemeat at Xmas, or things like chocolate spread. Also works for combinations like tomato puree (not too much) with mozzarella and basil leaves. Make it up as you go along, it's great fun and really yummy.

I use fresh peppers instead of from a jar and cook for slightly less time - gorgeous!
