How do I make curry without a jar???

I'll be using chicken or quorn pieces and I'd like to know how to make one without having to use a jar as it's for ds too :)

I don't really like creamy curries, the ones I do like are just like the old version of homepride curry sauce (jar) or like the ones you get from a chinese:o

And sorry to ask for so much but I need a recipe that's fairly easy and simple cos I'm a not that brilliant at cooking! Blush
that's why I have to ask so many questions on here! I am saving them all and making myself a cookery book:o

ok
this is for potato and onion curry:

chop an onion and fry in a little oil. add 1tbsp green curry paste. fry until onion is starting to go soft
add 1 tin coconut milk and bring to boil then simmer.
add 400g chopped potato and simmer for 15 mins.
stir in 1tbsp lioght soy sauce, 2tsp lime juice, 2tsp sugar
leave on heat to reduce if necessary.

obv you can use chicken or whatever instead of the potato

Still from a jar, but a decent one. Buy one jar of Pataks curry paste and one can of plum tomatoes. Fry onions in the curry paste and then add the meat and fry til sealed. Add tomatoes. Finish with coriander if you like.

easy peasy:
fry onions, other veg (and meat/prawns/quorn).
add curry powder or good quality curry paste and coat veg etc.
add stock (veg or chicken)
then add few good handfuls of dried red lentils. simmer slowly. it will thicken and lentils turn into lovely thick sauce. season to taste - add more paste/powder if necessary. before you serve add a good handful of fresh corianer.

if with any of these recipes you add a tbsp of garam masala in the last few minutes of cooking it really rounds out the flavours

I do the chicken curry from The Dinner Lady's cookbook. Very simple and you can decide how hot to make it.

Peel and dice 225g carrots
Peel and dice 225g onions
Peel and finely chop 1 garlic glove
Peel and core 225g eating apples. Dice and leave them in fresh leon juice so they don't go brown.

Put onions in saucpan with some oil and cook until soft. Add garlic and carrots.
Add 1 tablespoon curry powder and 2 teaspoons of turmeric.
Cook for 10 minutes or until carots are soft.

Add 450g diced chicken. Stir ingrediants together and cook for 5 minutes to seal the chicken.

In a jug mix 25g plain flour with 600ml water. Mix until smooth and then add to saucepan.
Stir together well.
Cover saucepan and cook for 20-25 minutes.

Add the apples, 55g sultanas and 2 tablespoon of mango chutney to the saucepan. Mix and cook for a further 10 minutes.

Serve with rice and naan.

Fry onions and garlic in oil and spices , cumin, corriander, chilli, garam masala, etc add quorn or chicken and fry, add a can of chopped toms and a little water, top up if necessary and let it bubble.

I add mango chutney and creme fraiche too which makes it sweet and creamy, lovely with chick peas and peppers.

Ready-mixed curry powders tend to be full of salt - much better off with the real spices.

I REALLY recommend the Curry Bible by Madhur Jaffrey. It is BRILLIANT. You only need about six spices to make just about anything and all the curries I have made from scratch are AMAZING. Once you get the hang of it you will be hooked!!!!

I love the Jamie Oliver chicken tikka recipe that's in Jamie's Dinners - adjust the chilli depending on how hot your DS can take it.

This is it from a US website. Cilantro is fresh coriander and heavy cream is double cream. It looks like a lot of ingredients but it's not difficult and we all love it. except ds2, but he's a PITA. Wink
