Quinoa - tell me how you cook it / serve it / make it delicious

I keep reading how healthy it is, and have now got a big bag sitting in my pantry. But, have no idea what to do with it.

Any suggestions, recipes or general advice much appreciated.

google the recipe for the Leon superfood salad - I leave out the alalfa sprouts but otherwise it's yummy

Use it like couscous but spice it up a bit. Dreadful stuff imo

I always cook it in stock and make sure you don't overcook it! Its good with roasted vegtables mixed into it. I love the stuff!

I had it for lunch today, cooked it in half stock half coconut milk, then fried it in a wok with tinned pineapple (chopped), peas, line juice, soy sauce & eggs (a bit like egg fried rice). It's a simplified version of Mama Pea's Thai Fried Quinoa, we all love it!
I also cook it in stock or half stock half passata and then mix with roast veggies, smoked paprika and cheese. Then either eat that alone or use it to stuff peppers. Mmm, hungry again now!

I cooked it once and ate it. I won't do it again. Looked like eyes and I felt as if I was eating frogspawn. Sorry!

Dice cucumber, peppers, feta, grilled chicken breasts, tomatoes. Add to cooked and cooled quinoa along with olives, crushed garlic clove and finely chopped red chilli.

My mil adds it to normal (lettuce-based) salads and it's surprisingly tasty like that too.

Haha, thanks caerlaverock! We do have my friend, who is gluten free, staying at the moment - normally that kind of meal is reserved for dinner time! Although having said that it is really easy, I should make it more often than I do!

It's impossible to make it delicious. Just throw it straight in the bin, and avoid the effort of cooking it, only to have everyone reject it and throw it away anyway. Grin

I find cooking it and treating it just like cous cous in most recipes work. It has an unusual flavour, but its great if you are avoiding wheat.

How about some simple stuffed peppers? Mix quinoa cooked with a little stock, fresh herbs, vegetables and a nice cheese and bake until the peppers and soft and juicy. Great veggie recipe and easy to adapt to whatever cheese/herbs etc you have to hand.
