coleslaw ideas please

I love homemade coleslaw but mine never tastes as good as other peoples. Could be a dressing problem, never really sure if I should use mayo or salad cream, or a mix?

I use mayonnaise a tiny touch of mustard, black pepper and salt.

If its too sour i add in a pinch of sugar to get it right.

Keep adjusting the seasoning to get it right.

I use a mixture of mayonnaise and greek yogurt. Are you putting enough salt in?

Adding onion, apple, raisins, pumpkin or sunflower seeds helps to give a bit of oomph.

Right, this is yummy:

Half a cabbage, finely shredded
2 carrots, grated
Half an onion, grated
Plus (if you feel like it, but not necessary)
1 apple, very finely chopped
Tablespoon sultanas
I use the shredders and graters in food processor.

Big dob of salad cream
Big pinch garlic powder
Quarter teaspoon sugar if not using sultanas.

Mix them all together thoroughly. Leave in fridge for half an hour. Just before serving add teaspoon of poppy seeds for extra crunch.

Would like to claim this as my own, but have to credit my mate, Kirsty, from university days. Really is lovely.

Caraway seeds or (not as well as) fresh coriander are good too.

I would steer clear of salad's cream.It is the semen of Satan.
I do mayonnaise with plain yoghurt and some oil and lemon to thin.
Make sure you shred your cabbage very very finely.
Nothing more offputting than huge indigestible chunks of it.
Red onion also,in preference to brown.

I suppose it depends on what type of mayonnaise you have. I find it too insipid, but perhaps I just have duff mayo.

Oh blimey, if someone told me 5 years ago that I'd spend Saturday night talking coleslaw to someone I've never met I'd have split my sides.

Hellmans is the only acceptable commercial version imho.
And no nasty low calorie versions either!
(They use donkey spit to give it some body.)

Grated beetroot is nice in it and a great way of using up all the seasonal beetroot.

I find that Salad Cream gives a better result than mayo -it has that vinegary tang to it (the only time I ever use it)

I used to be a chef in a wine bar and we always used to add lemon juice to the mayonnaise, and it is also good with tinned mandarin segs in :)
