can I use cooking apples?

I have a bag of Bramley apples and want to use them. It is for a cake - a sort of upside down apple cake.

I would, but I'd make sure I had enough sugar in the recipe.

Also Bramleys go brown very quickly once you've peeled them.

What are you making? The other main difference between Bramleys and eating apples is that Bramleys cook to a mush and eaters don't.

I think they get thrown in cider.....oh what a shame, only needs 100ml so I had better drink the other 150ml!

I wouldn't, but then I'm not a great baker so need to follow it to the letter.
The texture of Bramleys could be wrong.
I'd get Granny Smiths.

i wouldn't use bramleys for an upside down cake, you need a fruit that will keep it's shape

def use granny smiths or a coxs pippin

Oh not an upside down cake - I looked too quickly. Just a chop apple up and bung in mixture cake.

Any other ideas for cooking apples? I always make crumbles and pies and am bored of them.

There are some good Apple and Chilli chutney recipes, and Apple Sauce is always good.

how about baked apple then?

hollow out the middle, pack with a mixture of dried fruit, sugar and butter then wrap in foil and bake until soft - with ice cream or creme fraiche

If you are chopping the apples up and putting them in the mixture I would give it a try. The texture will be softer, but I don't think it will significantly change the outcome.

Thank you for help. Have put it in the oven! I would do baked apples, but have lots of raisin & sultana haters!

They are quite hard feeling apples, so hopefully will be ok.

Do let us know how it turns out. I have a friend and a neighbour who always give me lots of apples every autumn, so am interested in recipes that use cooking apples.

i wouldn't think they'd go to mush in a cake....I often use bramleys for pies and because i use them raw and add very little liquid they retain texture.

Hmmm. Very nice with some ice cream. It worked fine!

Googled recipe to avoid copying out...the googled one has cooking apples listed!

Sounds delicious. Although OH would hate the idea of cider goinf into a cake. He would rather drink it instead.
