what can I put in my homemade burgers to make them taste more burger like?

have made burgers for the kids' tea and we'll have them for our dinner tonight

they taste OK but still quite like mince and I want them to taste a bit more meaty (if you see what I mean!)

I've put in a clove of garlic, an onion, a grated carrot and mince (have it all mixed up in a bowl).

I was thinking of putting in chutney but what else could I shove in?

FrayedKnot · 10/03/2006 18:37

A splosh of Worcester might do the trick too.

Have just done this for my kids!

Do you have a copy of 'Real Fast Food' by Nigel Slater? He has loads of ideas for burgers there. I can go and have a look in a bit if you want

foxinsocks · 10/03/2006 18:40

oh mercy you star

have that book hidden in giant pile of books but have just dug it out and it has loads of burger stuff

thanks for all your ideas

I bet salt is the magic ingredient.

Twiglett · 10/03/2006 18:41

you are seasoning them aren't you? .. you do need to add salt and pepper

I actually OWN a burger book (I know .. how ridiculous)

the 'best-ever american burger' is

1 small onion finely chopped
450g lean minced beef
1 large garlic clove
1 tsp ground cumin
2 tsp ground coriander
2 tbsp tumato puree or ketchip
1 tsp wholegrain mustard
dash worcestershire sauce
2 tbsp chopped fresh mixed herbs (parley, thyme and oregano or marjoram)
1 tbsp lightly beaten egg
salt and black pepper

RTKangaMummy · 10/03/2006 18:41

We never cook with salt

Pruni · 10/03/2006 18:42

Always find they need WAY more salt than I think - and more than I feel is healthy...
Worcester sauce or fish sauce or soy sauce

rummum · 10/03/2006 18:43

I put bread crumbs and onions with the mince and some sweet chilli sauce to bind...
bloody lovely.... [mmm]

Twiglett · 10/03/2006 18:43

if you don't add salt to burgers they taste a little blah

salt isn't a devil .. its excess salt that is a problem

Smurfgirl · 10/03/2006 18:52

This thread is so helpful, I was just about to post asking how to make burgers!

LadySherlockofLGJ · 10/03/2006 18:57

We do a brandy and peppercorn sauce with our burgers, or a blue cheese sauce.

Served with potato wedges.

foxinsocks · 10/03/2006 19:05

I had forgotten salt (though weirdly had added pepper)!

think I will add some mustard aswell

yummmm

RTKangaMummy · 10/03/2006 19:06

Twiglett we never add salt when cooking or eating

We changed when preggers and haven't looked back since

Twiglett · 10/03/2006 19:06

enid puts vinegar in chocolate cake though

SorenLorensen · 10/03/2006 19:06

Definitely salt. Mince just tastes like..er, well, mince otherwise. I sometimes put very finely chopped gherkin in mine (done in the food processor).
