Can anyone recommend a good veg curry receipe?

This is a lovely curry although I ususally have it as a side to a meat curry, it would be great with naan and pilau rice as a main.

I often make veg curry but don't use a recipe. At the moment I am too lazy to make my own curry paste so tend to use bombay spice mix Blush.

I make the curry by frying some chopped onion in olive oil, then add some bombay spice mix. Add cubed/chunks of potato and a splash of water and let it cook for about 10 mins.
Add whatever veg you enjoy eating. I tend to use lots of spinach, broccoli, sweetcorn, mushrooms and butternut squash (which dissolves during cooking and thickens it all up). Make sure the veg is all lightly coated in the oil/spice mix.

Add one tin of chopped tomatoes. Make sure there is enough liquid. If not, I tend to add veg stock. Leave to cook for around 20 mins.
Add one small carton of yogurt and/or one small tin or single sachet of creamed coconut.

I've done many variations on this using thing like aubergine, okra, quorn in it too. And when I am not so lazy I use dried spices: Cinnamon, nutmeg, cumin, fenugreek, ginger, cardamon and coriander.

Curry Easy by Madhur Jaffrey has some amazing veggie recipes. I'm not a veggie but we often have them. She does one with onions, chickpeas and spices which is yum and another with black eyed beans and squash. Sorry I can't post the recipes as away from home but if you can get a book cheap it's worth it. Some yummy dips as well.

Allegra McEvedy's cauliflower and coconut curry from her Leon cookbook is very tasty. Go easy on the Madras curry powder and chilli though. Leon Gobi recipe here.

Mattar paneer:

Fry a chopped onion with a couple of crushed cloves of garlic and some grated ginger. Add a teaspoon of turmeric, another of cumin seeds and a finely chopped red chilli. Add a couple of finely chopped tomatoes and a bit of water then some frozen peas. Cook for about ten minutes.

Meanwhile, fry cubes of paneer.

Add garam massala and salt and pepper to the pea mixture, up the spicing if needed, boil rapidly to get rid of any excess water then stir in the paneer.

Jamie Oliver has a great recipe for a sauce which can be turned into a variety of curries. I like it with potatoes, carrots, cauliflower, chickpeas and then a handful of spinach thrown in once it's done. here The one I've linked to says it's a chicken curry but ignore that and shove a load of chopped vege in when frying the onions. I really rate this one as an easy totally from scratch curry base.
