sugarpaste modelling - how to store models made in advance?

I'm making a postman pat birthday cake for my son's birthday next week & had a trial run at modelling jess the cat tonight.

I've made it with dr oetker ready to roll fondant icing, which already includes gum tragacanth. Its turned out pretty good so I want to keep it but I'm not sure how I should store it.

I've put it in an airtight plastic container & in the fridge but want to know if thats the best way to keep it? Will it stay soft/edible that way?

You need to take it out of the fridge and the plastic! The combination of fridge and plastic will ruin your figures with moisture. Store either open, somewhere clean and cool, (ie not next to the cooker) or put into a cardboard box, again somewhere cool, but not too cold. It will dry a bit, but it should to hold it's shape, it will still be edible.

Argh thankyou only just reading this now - hope its not ruined already! Won't it crack if I let it dry out though?

It shouldn't crack. You say the Dr O fondant already includes gum trag - did you buy it like that or add it yourself? Just interested really, I get through alot of gum trag!
For future use, if you added it yourself, add a little Trex too (don't use lard!) because that helps to keep the cracking to a minimum. Hope your figures are ok Smile

thanks. yes I bought it like that though no idea how much is in it. I did wonder if I should add a bit extra.

Thanks for the trex tip - thats white veg fat isn't it? Think I may buy some before starting to make Postman Pat!
