Can I save this rogan josh..lamb is chewy ??

I've just cooked jamie oliver's lamb rogan josh. I've done it several times and the lamb has always been really tender.

This time the lamb is chewy..does this mean it is over or under cooked ?

I am reheating it in the oven in a few hours...can I save it ?

Could you put it in the oven covered for a couple of hours on a lowish heat? Most meat tenderises if cooked slowly, so might get rid of the chewyness?

I would say the lamb must be undercooked if it is chewy. What cut did you use?

I would try slow cooking in the oven for a decent length of time - say an hour. The trick with the tougher cuts is to cook them slowly, sometimes too fast a boil can toughen meat.

I would certainly say you can't do any harm at this stage by slowly cooking for a further while.

Its neck fillet. Cost £15 so I really don't want to have ruined it!

It cooked on the hob for an hour although the doorbell went when I brought it to the boil and so it boiled for a few minutes before I brought it down to simmer.

I will slow cook it for while - its for friends coming for dinner though so fingers crossed. I don't want to serve them a plateful of chewy lamb.

What would be the best oven temp for slow cooking ? Its a fan oven.

I really am rubbish at cooking meat...wish I knew some vegetarians.

I usually stew neck fillet very slowly for several hours so I suspect yours is underdone.

Put it in the oven on 160 for the next three hours (or until dinner is served) just be sure that there is enough stock to prevent it from drying out
