Agree, only do puddings if your DC hsan't had enough with meals, I wouldn't get in the habit of always having a pudding, unfortunately DC1 did at nursery and now it's just a 'given' he'll have a pudding after every meal.
anyway, at 8 months, I'd be doing lots of food they can pick up and play with, so apple, pear, melon sticks, you can make up mini scones with just a tiny bit of sugar in (or maple syrup if you want to avoid refined sugar, use the 'good stuff' not blended, and use sparingly- you might want the scones sweeter, but your baby doesn't have the same sweet tooth).
If you want to do puree pudding pots, get some cheap mini plastic pots with lids (you can normally get packs of 5 or so in pound shops or supermarkets), make up some purees and freeze. Apple is a good base then throw in whatever fruit you have. (For basic apple puree, peel, chop apple, throw in a pan with enough water to cover, cook on a low heat until v soft, then blend or mash. I'd often put in blueberries as we often have those in.)
If you are shorter of time, ripe bananas can just be mashed with a fork, or at 8months, try hand sized chunks.
But not every meal, make life easier for yourself later on!
