Wedding cup cakes

Hi, wondered if anyone could help my daughter is getting married next year and wants a cupcake wedding cake. We are on a tight budget so thought I would have a go at doing it myself. I know I can make a cup cake it's the decorating I will find tricky. Any tips anyone?

I personally wouldnt go down the cupcake route - to me it adds extra work and honestly the cupcake wedding thing is too old hat for me. Do you want to be icing buttercream and decorating like made a couple of days before the wedding?

Wedding cakes are now very elegant, quite plane but tall. Have a look at these. www.maisiefantaisie.co.uk/wedding-cakes.html Plenty of ribbon hides the chips and tears.

You can make lovely vanilla sponges/maderia's and freeze for closer to the date for decorating. Using sugarpaste is tricky but not that difficult and it could be completed a couple of days before the big day without worrying about the buttercream.

If you have a kitchen shop close to you then ask if they are doing classes or know of anyone holding them. I'm sure you can learn loads. I did one recently and it was excellent.

My daughter wants cupcakes as she doesn't want a traditional cake. I think it will be harder to bake a traditional cake. The cakes on the link are lovely but very expensive.

I have recently made 150 cupcakes for a wedding, it was actually really easy just time consuming, esp. the icing.

I made the buttercream on the Tuesday (no milk only butter and icing sugar) and stored it in the fridge until Friday, when I took it out the fridge to bring to room temp so I could ice the cakes Friday evening. I baked the cakes Friday morning and left them to cool under tea towels until I needed to ice them. I found making a fresh batch of batter for every 24 cupcakes (I get 2 trays in my oven at a time) ensured they all rose evenly, I used an ice cream scoop (old fashioned metal one with squeeze mechanism) to make sure they were all the same size, used muffin cases instead of cupcake cases so the icing started at case not half way up the cake.

For icing I used a 1m nozzle and practiced on a 99p pack of shop bought cupcakes, pipe on, scrape off, pipe on, scrape off until I had it perfected. Roses look lovely but didn't have the same effect as the Mr Whippy swirl with the decorations on top. I Iced Friday evening and left them in boxes (I bought some 48 cupcake boxes on Ebay) until morning when I placed the butterflies (Some icing and some wafer) before taking to the venue and setting up.

Thanks brilliantberryboy what a brilliant idea to buy some cheap ones to practice on. Where would you buy wafer butterflies from?

I got mine from here but most cakes decorating shops sell them.

Blueberry, fab idea, i never thought of edible butterflies, i made around 40 the other week out of modelling paste, god knows why it would have been so much easier to do it that way.
Red, do you mean, the jubilee cupcakes? yes they were plain ole buttercream.
I always use an icecream scoop for cupcakes, it gives you exactly the same size for all of them, but make sure you dont fill it to much.

Red, that was the first time i made cupcakes with twotoned buttercream before, quiet pleased with how they turned out, when i make buttercream i beat the hell out of it for about 10mins, cant believe the difference it makes, so lifhr and fluffy, almost looks like double cream, i do find it helps so much if you have a stand mixer.
