Hi all. I have three bags of gooseberries in the freezer. Any yummy recipes? Can I chuck them in a crumble frozen or do I need to cook first? Thanks!

I'd defrost and then poach them before adding a crumble otherwise the crumble would be too soggy. Gooseberry charlotte goes down a treat here, poach them first for this too.

We had gooseberry cake as children - a scone base, a layer of gooseberries and a layer of crumble on top. great with custard

How do you do a Charlotte? Is that the same as a cobbler? I'm not very clever am I?

I make a cherry streusel cake but replace the cherries with gooseberries, comes out very nicely.

If they're frozen, I'd look for a streusel cake recipe that asks for tinned cherries, rather than fresh (as they'll be the same sort of texture once defrosted).

a cobbler is a scone type base, a charlotte is made with breadcrumbs fried in butter and sugar. yummy!
