I need to know how to mould chocolate flowers, what is the best thing to use and how do i do it?

I'm being very adventurous for a friend's birthday cake. I will be doing a 2 layer cake, covered in chocolate fondant and then with white, dark and milk chocolate flowers starting on the top and then cascading down the side of the cake to the bottom.

I've learnt a lot about working with normal fondant but I'm not sure what to do for chocolate. I was going to use the regal ice one for covering the cake but wanted something nicer for molding the flowers.

Is it cheaper to make it myself or should I just buy it?

I don't know about flowers, but chocolate leaves are easy to make by thinly coating rose leaves with melted chocolate, and peeling off when they are well set - use fridge to speed process.

Depending on what flowers you want you can buy cutters or if you want roses they are pretty simple to make. You can make them out of chocolate fondant and leave them to set slightly before adding to the cake with a little melted chocolate. YouTube has loads of great tutorials.

Hi all,

I've got plunge cutters, loads of them, various metal cutters aswell and I've also seen silicone moulds and wonder how good those are.

My question is more about what Chocolate to use. Modelling Chocolate seems to be really expensive although I have found a recipe to make it myself using Chocolate and Golden Syrup.

Has anyone tried this? The Chocolate Fondant (the Regal Ice one) only seems to come in Milk Chocolate colour, I'd like to use White and Dark chocolate aswell.

OP - do you mean like this? - in which case google "belgian chocolate sugarpaste" - comes in white, milk and dark, tastes much better than normal chocolate sugarpaste, and is easier to handle than moulding chocolate.

You do have to get it quite warm to make it pliable, though.

Yes, that's what I meant. I was hoping to find an alternative though because it's so expensive...

I've sort of changed the plan in that I'm going to cover the cake in Chocolate Ganache and then just do the decorations use either the Chocolate Sugarpaste (that you've recommended) or try and make my own Chocolate Modelling Paste.

Hopefully that will keep the costs down a bit...

if you google "how to make chocolate roses" then you get lots of tutorials which include making the chocolate paste - I just ignored them because I'm lazy I already had the belgian choc sugarpaste left over from another cake (and a little makes a lot of flowers)

I have made dark, white and milk modelling chocolate. You really need to use top quality chocolate especially with the white or it splits and you end up with oil and sludge.

I used a recipe using golden syrup too will see if I can find it.

You can find loads of tutorials on you-tube - mich turner etc. You dont need cutters as making petals is all about shaping with the thumb to make tear drop shapes.

You can buy cocoform or specials chocolate mix for using flowers which are totally edible. Try Squires online.

I havent had a go yet but plan to make a white chocolate cake with daffodils as part of a wedding cake next year.

I've managed to find some Belgian chocolate fondant online which doesn't seem too expensive, £3.99 for 250g in both white and milk chocolate so I will get that and use chocolate ganache to cover the cake.

I bought and used cocoa form off ebay. it was quite expensive tho. Difficult to handle as it melted v easily. could yout not just use sugar paste in chocolate and white chocolate favours...? could add some gum tac to make it set harder... .
