Interesting fillings for afternoon tea sandwiches

We're having an afternoon tea following our ds's naming ceremony in a couple of weeks and I was looking for some ideas of interesting sandwich fillings - rather than the usual tuna or ham or smoked salmon etc...

Not really unusual, but coronation chicken is very yummy plus very easy to make & store in advance. Also, thanks to the Jubilee I suspect, it seems to be creeping back into fashion again.

Roast beef and horseradish
Prawns with rocket, chilli and lime
Falafel, hummus and roasted vegetables
Mini croque monsieurs
Spicy chicken wraps
Bacon lettuce & tomato
The possibilities are endless...

Another not unusual but nice one that is easy to make and everyone seems to like: Brie and grape. Not so cheap though...

The best sandwich I had in my LIFE was:
Slightly salted pretzel type bread with runny Brie, dried apricot and lettuce. Mother of GOD that was a good sandwich.

Hummous, roasted red pepper and pesto. That's the vegetarians looked after too then. My favourite sandwich ever is chicken and stuffing, you need to mix a bit of mayo with the stuffing though so it doesn't make a mess.

Cheddar with apple slices, remember to toss the apple in a little lemon juice.
Cucumber with mint and philly
hummus with grated carrot and raisins
goats cheese and watercress
prosciutto, asparagus tips and cream cheese like boursin with black pepper
grated cheese mixed with some chutney
avocado and tomato
radish and cream cheese
egg mayo with rocket
prawns with lemon mayo, cucumber and rocket
cream cheese with pineapple and chopped walnuts

The best bread to use is that Crusts Away stuff. A loaf of that will give you 27 finger sandwiches or 36 little triangles.

I second coronation chicken, yum.

Go to your local Lidl/Aldi and get loads of the European meats like salami, pastrami etc. Just too delicious.

Parma ham, sliced mozzarella, tomato, roasted red pepper and either a little mayo or a drizzle of olive oil. The latter is better if it's on ciabatta or sourdough type bread.
Poached salmon with dill and watercress mayonnaise, wholemeal bread.
There is absolutely nothing wrong with good old-fashioned home-cooked and sliced ham with English mustard on slices of crusty bloomer bread, in fact it's almost compulsory at such ceremonies! But the ham has to be the absolute best, none of this packet lark.

The nicest sarnie I ever had was onion bhaji, mango chutney, salad and red onion on really dense seeded brown bread.

Having said that, generally I don't like a lot of fuss with them and prefer things like:
cream cheese and cucumber
egg and cress
brie and rocket
