Freezing uncooked lasagne

I'm currently batch cooking for the freezer (as i am 36 wks pg). I have made an enormous cauldron of bolognese, and was just about to make the white sauce to layer up with dried lasagne sheets, and it occurred to me that maybe i shouldn't freeze dried uncooked pasta.

So do any of you wise people know if it's okay. Can't find much when i google.

Hmm I don't know, but I think I would freeze the separate bits. I think if you had fresh uncooked pasta that would be ok Wink

It will be fine to freeze it unccoked, absolutely.

I used to run a catering business that made frozen meals to order, when you take your lasagne out, let it defrost completely before cooking it, and it won't take as long to cook as if you just made it, as the lasagne sheets will soak up some of the liquid.

Do it. Very sensible idea. If you cook it, then freeze it, then defrost and warm it up it will be dry and horrible.

Yes that's what i thought, and the pasta would be overcooked and soggy. Okay, i'll layer it up cold of so the pasta doesn't half cook and bend. Thank you.

I quite often make lasagne and freeze it - it always comes out fine when it's cooked Smile

bigTilly do you make it to completion and freeze or do you make it to the point you would put it into the oven?

I always cook mine before freezing, but not for as long as I would if I were going to eat it IYSWIM. I defrost completely before reheating and it is always fabulous, never dry or soggy, it's the family's favourite meal Grin

I usually make up to the point of putting into the oven, but sometimes put cooked lasagne into the freezer ready for "TV dinners" for the troops when I am out / they are in at funny times!
