Recommend a knife please. :)

Hi,

DH has said he would like a new knife for his birthday (Mum and MIL always after ideas!).

What brand/type of general purpose chef's knife and sharpening equipment would you recommend?

Have a search around the web for Japanese professional chef knives, the really good ones are the business, made in the same fashion used for swords, namely the steel is heated and folded over and over again before being shaped into a knife.

They are quite pricey mind, but will last a lifetime.

Sabatier or Henckel are what DH go for (he loves using them when cooking). If he had to choose between the two, he'd probably go for Henckel - but we have limited pockets!

He has both a steel (looks like a stick of metal in a handle) and a whetstone (that lives in a box) for sharpening.

I have a sabatier. I love it. Really sharp. It's the only thing I've ever found that does an adequate job on a bloody swede.

We've had a set of Global knives for about 6 years and they are amazing. Cut through everything like butter.

Our Global is doing really well after 9? Years of daily use. (oi,dh needs a whetstone moment now though!). Our sabatier are good but they need to be kept totally dry otherwise they rust. We also have some Porsche 501 which started as a present and we've added to as they are lovely to use.oh blimey sounds like we're rednecks waiting for an invasion! We just like cooking!!

thanks all, will try to find somewhere he can look at them. maybe ask my mum to give him money or voucher towards it.

i think some of the Henckel ones might be a bit out of her price range... :)

All knives go blunt. Professional chefs send their knives away to be sharpened and you should too. Buy him something half decent with a promise that you'll get it sharpened properly
