Thick pork chops!

I want them for tea tonight with a B-I-G salad! But I normally cook them as part of a dinner with gravy and veg. Anyone got a good way of cooking them that won't be too dry? Any good sauces?

Chuck the pork, some onions and some barbeque source in a slow cooker - cook for many hours, pull the pork apart with some forks - it goes all stringy and is very moist from all the sauce. Staple of southern US states, simple and tasty, pork loin as a joint is commonly used but it works fine with chops too. We eat it as sandwiches with salad.

Season, wrap in foil parcels and bake in a lowish oven for 40 mins. Cumberland Sauce is nice with pork.

Not saucy, but how about remove the fat, bash out with a rolling pin, dust with seasoned flour, dip in egg then breadcrumbs (Japanese panko preferably) and fry until golden? Serve with lots of freshly squeezed lemon.
