Does anybody have any healthy-ish muffin recipes?

I've tried googling this but I haven't been very successful so far so I thought I'd ask if anybody has any tried and tested healthy-ish muffin recipes that me and DD (22month) could eat as 2nd breakfast/morning snack on the go?

Fingers crossed the weather will be okay for the next days and I have decided that we will be going out early to make the most of the sunshine so there will be no time to stay in and eat 2 breakfasts.

I have heard that you can keep a batch of muffins in the freezer and then defrost when needed. This sounds like a very good idea and would also be quite tasty for me!!!

Other on the go snack ideas are also very much appreciated. Babybels work quite well but I keep forgetting to buy them! Hard boiled eggs also worked a bit but did seem to fill her up so much that she didn't want her dinner!

I'm useless at this snack thing - which is why we usually have 2 breakfasts!

Theres a courgette and raisin cake recipe in the recipes database. If you bake it as muffins, they'll be perfect for your second breakfast!

We love these cheese and spinach muffins They are a big hit with my 2yo dd as they are cakes, and me as they include healthy stuff as well as being cake.

I make these and they are very nice!
fruity carrot muffins:

Ingredients: 1 beaten egg, 60ml melted butter, 60g soft brown sugar, 125ml milk, 1 medium grated carrot, 1 mashed banana, (pref a bit over ripe!) 30ml of a mix or either sultanas, blueberries, cranberries, chopped dried apricots or dates, 150g Self Raising flour, 1 x 5ml spoon, baking powder, pinch mixed spice or cinnamon.

Put all wet ingredients into bowl and mix.
Add sieved dry ingredients.
Mix until just combined.
spoon into cases and bake for 20-25 mins at 200c.

I usually use dates and apricots as they are my favourite dried fruits!
Sometimes I top with a little sprinkle of brown sugar and mixed seeds before baking.

As far as snacks go... banana, bread sticks, dried fruit, chopped up veg, mini sandwiches with "healthy" fillings (houmous, avocado, cheese, peanut butter etc) cold pasta.

Sure there are lots more.... will have a think... but I am sure there will be someone else along in a minute with better ideas!

These are great recipes thanks! It was exactly what I wanted - the only challenge is working out which one I cook first.

MrsP, thanks for your suggestions. I feel really stupid that I didn't think about breadsticks, it seems so obvious!!! I said I was no good at this snack thing. Other mums always seem so organised with their littles pots of stuff in their handbags!

I make cornbread muffins with cheese and hidden veg: carrot, courgette, mushrooms, anything.
