Adjuki (sp)? beans. Anyone any different ideas from rice salad?

Just made a whole pot of them and i need some ideas for my veg. mum and me of course who's staying next week

They're really good with steamed rice or if sweetened with some sugar and put with vanilla ice cream (I know, sweetening beans sounds a bit weird but they're used as a dessert filling in South Korea.)

OOh I remember having them sweet in a japanese restaurant ages ago they were lovely what a good idea! Thank you! When you put them with the rice do you cook onions and garlic with them?

Definitely freezes! Always a load in my freezer. Nigella does a great "fast" chilli which my kids love (if not too spicy!)

mash half of them, then combine the mashed with the enmashed and shape into burgers - add seasoning, herbs, spices to tasts and fry or oven bake,

Lovely as a tangy bean salad with spring onion, coriander and an olive oil/lime/cumin/chili flakes dressing. Crumble feta on top if you like.

Great as a base for patties mixed with softened chopped kale or any gren and spiced as above + a yogurt/mint/coriander/lime and garlid dipping sauce.

You can also mixe them with baby spinah leaves and a roast sweet potato cubes. Dress with a miso/lemon juice vinaigrette for something more japanese.add toasted sesame seeds.

For a lebanese version, make a lime/garlic/tahini dressing and grilled halloumi cheese. Dress like a bruschetta on grilled rye bread drizzled with olive oil, chopped tomsto and thyme

I use them to make a kind of cheat's version of re-fried beans

BEcause they're so soft and squidgy, if you just heat them through with some pretty standard Mexican flavourings, and sweeten them a little, you end up with some 5-minute refried beans, and they're lush with flatbreads and the usual Mexican accompaniments - guacamole, sour cream, all that.

....and now I'm hungry!

I used some to make a dip last night using a hand held blender with some raw garlic, red onion, lemon juice & olive oil it was very yum! They're lovely 'cos they're not rich and they soak up flavours well. (I usually make dips with haricot or cannellini beans) so thought I'd try something different.

Oh, when cooking them with rice I just chuck pre-cooked beans into the rice and turn on the rice cooker (I don't know about in a pot. Maybe at the very end?). I don't usually add anything to my rice when it's cooking, but I bet sauteed onion and garlic would be tasty.
