Salad and dessert recipes please -lactose free and no fruit!

Friends coming for dinner and seeking inspiration for salad and dessert which are lactose free and also have no fruit in them!

All my favourite "entertaining" salads contain either cheese or fruit and my fave desserts all have fruit and/or cream!

I'm stuck so any inspiration will be gratefully received. (Rest of meal BBQ fare.)

I like spinach and rocket salad with balsamic vinagerette and glazed walnuts.

Pudding - rice pudding made with coconut milk and chopped pistachios on top

Vegan chocolate brownies or vegan cake with a tofu frosting??

Tomato, onion and brown lentil salad, rice salad with peanuts, peas and sweetcorn and vegan mayonnaise, vegan mayonnaise potato salad, some sliced fresh beetroot or maybe a bean salad.

Good luck, that is a hard task.

There is no lactose in cream. Or butter for that matter. Might be worth checking if it's lactose they need to avoid or all dairy products.

what??? of course there is lactose in cream and butter.

generally, the more fat the less sugar (lactose) there will be, but it will still have some in it

Butter is pure fat and therefore contains no sugar. Butter and cream may contain a trace of lactose, but this is only a problem in the extremely rare case someone is allergic to it. A standard case of lactose intolerance, where the person is not producing much or a y lactase, will be a non-issue with butter and cream.

I treat cream with Coleif which contains lactase to digest the lactose in it as I cannot digest lactose. Put 10 drops in 600 ml of double cream and then stir and leave in fridge overnight.

Otherwise you can bake cakes and other puddings but replacing butter and margarine with Pure margarine that can be bought in most supermarkets.

By the way - most hard cheeses including good quality mature cheddar contain no lactose.

yes but we don't know whether the OP's guests have an intolerance or allergy do we?
so saying that something contains no lactose when it actually does could cause a problem.

If I was lactose-free and someone served me up cream I would think they were a complete twit!

totally agree with that! but the OP prob not in a position where she can question her guests without looking slightly rude Grin

Swedish Glace is dairy-free and very yummy!

Surely most salads are easily dairy and fruit free? Are you looking for main course type salads or to go with something else?

This without the Feta would be just as great. You'd need to check the ingredients on harissa to be sure no milk products, or make your own Smile.

Something like this made with Pure instead of butter (and not served with yogurt!)?

Thanks everyone for your suggestions.

I did choc brownies and strawberries and ice cream for desert which offered enough choices for everyone.

For salad - lots of your options sounded great, but didn't have time to get the ingredients, so went for quite a simple green salad in the end and a tomato side salad. Bit boring but safer.

Not sure if my friend is lactose intolerant or dairy ... she is able to eat cake with butter in, but not milk products. Anyway, thanks again for the inspiration which really helped.
