Lovely picnic ideas?

With some picnic weather on the way :) I'm looking for ideas for a nice picnic please. Tis only for 3 people so I find it quite hard to come up with tasty imaginative stuff that doesn't take too much effort or ends up feeding fifty people.
What are your favourite picnic things?

Ohyoubadbadkitten, my fav is quiche, make a fab one with bacon onion, cheese eggs and cream, will give the recipe if you want. mmmm

Cold calzone - make your own pizza base (or buy the dough), spread with pasta sauce and cheese and fold in half before you bake.

Another one if you've got a breadmaker is to make dough, roll it out into a rectangle, spread with wholegrain mustard, chopped ham and grated cheese, roll into a sausage and slice into 2inch slices. Put these in a greased round cake tin like eccles cakes, leave to rise then bake = tear and share pinwheels.

Coronation potato salad - cold potatoes, mayonnaise, plain yoghurt, good mango chutney, bit of garam masala and a sprinkle of chili if you like.

Mince pies are a nice surprise in summer.

I like cold rice, peas, sweetcorn mix or cold tuna pasta. I also recently got some risotto balls from m&s, nice cold or warm. Mortzorella wrapped with risotto and covered in breadcrumbs, I am going to try making my version. I like veg and dips too in a picnic.

Some lovely ideas so far, thank you! - I like the pinwheel one and the risotto balls sound nice. dd isnt keen on potato salad sadly.

Hollow out a small crusty loaf by cutting the top off. Pack it full with yummy stuff, ham, mozzarella, peppers, basil etc etc, anything you like. Top back on wrap it up, great for kids, versatile and easy to transport. You can do it with little crusty buns as well if dc like diff things or just split the fillings.

Homemade scotch eggs. Cous Cous salad. Houmous or guacamole and raw veg.

For pudd, fruit skewers.

The hollowed out loaf sounds amazing :) my mum used to make fab scotch eggs but I've never attempted them. Are they tricky?

I used up a small fresh crusty loaf earlier. Took the top off and hinged it, cut the middle out and used up the remains of a pack of pepperonie and a mozzerella ball. There was a gap when the cheese melted. I would maybe add some chicken in the gap once the cheese melted in future. It was very well received in this house.

Scotch eggs or eggs nargis - the former just take boiled eggs, wrap in sausage meat, egg and breadcumb and fry. The latter use minced lamb that has been through a food processor and spice it to tasts then oven bake.

mini quiche style charts - get a bun tray, cut out pastry circles, just as for jam tarts and then fill with a mixture of grated cheese, egg and bacon.

Oh and cake - you need a cake

Pissaladerie, puff pastry sheet covered in caramalised onions, tomato slices, olives and anchovies and baked.

Scotch eggs not that hard. I boil eggs, take shell off. Make a meatloaf type of thing ie pork mince/lamb/beef anything goes, mix two together. Season and add anything you fancy from herbs to garlic to spices. Wrap around the egg and bake in the oven. I don't do breadcrumbs or frying on anything simply because we don't like it Grin.

Mary berries (? Spelling) lemon drizzle cake never fails and is yummy!

Flake cooked salmon stir into boiled rice with cooked peas.

Cut chicken fillet into strips, scatter with chopped garlic and cook in oven.

Pizza - can be just as nice cold

Fraid I've chickened out for Monday's picnic:
Doing:
focaccia with naice ham and goats cheese
Hummus with veggies and bread sticks.
Mixed olives with sundried tomatoes ( courtesy of Mr Sainsburys)
Tabouleh
Pretzels
A lemon tart thing that was on sale.

Looking at that list, we are going to explode aren't we!
