A joint of meat roasted slowly in a deep cassarole dish, with stock, and with a lid on. Very tender and tasty, best with cheaper joints of beef.

Ok...being very stupide her - does that not just mean you effectively boil the meat? Doesn't it get a bit rubbery?

Ooooh no no no.

I find brisket joints make fab pot roasts. Cheap as chips to buy and will probably make more than one meal.

you do boil it but very slowly, more of a simmer really.

So, what do you do exactly? I like the sound of the cheaper cuts of meat - but I always avoid them as I don't know what to do with them.

Do you brown the meat first, them stick it in a casserole dish and put it in the oven, or do you cook it on the hob? DO you stick veggies in, as you do with a casserole? How long do you cook it for? Do you just use a stock cube?

You can seal it before cooking but I never bother, just another pan to dirty.

I stick it in the pot, but add whole veg or at least big chunks of veg. You can always chop up at the end. I like to use shallots, mushrooms, carrots and big chunks of swede.

For the stock I use a watered down gravy mixture.

Pot roast chicken is fabby - you do need to brown chicken first for best results, but then you can just tuck into the chicken, potatoes and vegetables from the same pot! And it's quite low lard as well
