I have many jars
I have a PYO up the road
I have two DC who really like to be sticky, and a v hungry DH
I have a few more weeks of maternity leave

Can anyone give me/link me a simple strawberry jam recipe please? Interweb is confusing me.

I used Sophie Grigson's recipe, sorry can't do link on phone but it's on BBC food site. It was absolutely delicious, the smell of summer every time the lid came off the jar Smile

I also plan to make some soon.
Would be interested to know how your picking goes as wondered if the weather might have been too wet for a decent crop.
Good luck with the jamming.

Wash and hull strawbs. Chop in half or quarter if they are huuuge.

Pop in thick bottom pan with same/slightly less weight of sugar as strawbs. Squeeze of lemon juice.

Start off lowish heat and keep stirring to get the lovely juice out to dissolve the sugar. Turn up the heat until ot goes to a rolling bubble. At this stage, it is like napalm, so please keep kids and pets away and watch oiut for splashes. Let it boil merrily for twenty mins or so, keep stirring. It should start getting thick on the edge of the pan. Drip half a teaspoon on a clean saucer - blow to cool a bit then push it with your fingertip ai it should ripple a bit. I like it thick, so always give it another ten mins!

Wash your jars in boiling water (or dishwasher high) then pop in a hot oven.

Fill jars while jam is hot. Do this in the sink to avoid splatter (plus I am paranooid about jars shattering with the heat - this will only happen if they have a crack). I usually cover with a clean tea towel before popping lids on. Some people pop a circle of greaseproof paper on before, but I usually don't bother.

Try strawb and baby fig - gorgeous!
