Easy recipe for chicken & leek pie by any chance?

I really fancy making chicken and leek pie with a ready-made type of pastry top. I've only just begun "proper cooking" since the birth of my baby boy, and after years of snacking, crackers, cup a soups and similar rubbish. So, what I'm saying is, i'm no great shakes in the kitchen. I've started making a few simple meals and feel really chuffed and just lately i've been hankering after a nice golden topped chicken and leek pie. Would anyone have an easy recipe I could use?

Mine's a bit rough and ready, but soften leeks and garlic in butter or oil. Then make a white sauce by adding flour to the leek mixture and then stirring milk/thickening in usual way.

Pour sauce over chopped cooked chicken (you can poach the chicken in the milk you use for the sauce, if you like, with a bayleaf and some nutmeg) and put pastry or mash on top.

Cook in moderate oven for 30 mins or so. No real quantities, but usually a couple of leeks, 2 chicken breasts and a pint of milk.

Thanks singersgirl, i recently learnt how to do a white sauce so that's do-able too. Ladysherlock....the shop bought pastry would have been a given i'm afraid. Still too easily flustered and flapped in the kitchen (blush)

Right-ho, thanks everyone, gonna soften me leeks & onion and brown the chicken & put in casserole dish with cubes of ham, then proudly add my white sauce & pastry lid on top. This is for someone coming round later in the week so I'll let you know how I get on. Oh, and it'll be with roasted carrot and brocolli - also recently learnt and now being wheeled out with everything Grin

can I recommend crumbling a chicken stock cube over the softening onion and leeks

if you soften your leeks and onion in enough butter (big lump) you should be able to make your white sauce immediately over it .. ie when they're soft just add flour and mix then slowly add the milk
