Recipes to freeze? Stocking up freezer for when DC2 arrives...

I'm about to start filling up the freezer with meals for when DC2 makes an appearance. My brain doesn't seem to be working, and the only things I can think of to cook and freeze are curry, casseroles, lasagne and cottage pie. Any ideas, folks?

or chop onion/garlic and freeze in portions - so can knock up a quick pasta.

I stocked up on a basic mincemeat recipe, then made spag bol/shepards pie as and when i needed it.

I made individual portions and family ones, so that when DP was out during the day i knew i was not wasting food.

U might also want to make a batch of biscuits, they freeze well and are a gr8 for when you want a sweet treat

One handed breakfasty/snack type foods such as crumpets, muffins etc. Buy a pack and freeze in individual bags - they can go in the toaster straight from frozen.
You may need to master one handed food, especially if you are breast feeding! Grin

How about a batch of cheese sauce and tomato based sauce that u can just add pasta too. Make a big batch of chilli so u can have it with rice one day and jacket potatoes the next. Soup is always a good one too especially if I have some part baked rolls in the freezer. The tana Ramsey ginger cake also freezes well and is perfect fir when family turn up to come and meet the new arrival.

Thanks everyone for your suggestions. I made a start today with sausage casserole, and cauliflower and pasta cheese. It is a good feeling to have got going. Smile

I found that small portions for DC1 were the most useful - as DH and I could always survive on takeaways if needed.

Ooh - I've started as I'm back to work after mat leave - made 3 bags of bolognaise and 6 individual lasagnas so far - and have bagged up portions of seafood mix and smoked fish for paellas.

Plan on doing chilli next. Will also do some corned beef hash in tin cartons so it can go straight into the oven.

I'm rubbish at cakes etc but would like to have made some healthy breakfast muffins!

Just a few of my favourite things! (OK the scones are not a dinner but they are good!)
I also have a steamer. Chuck chicken in oven and prep veg. Just press a button about half an hour before chicken is ready (intellisteam) and roast dinner (ish) done! I use mine LOTS!
Stir fries and quesadillas are quick and pesto and pasta is an easy standby!
Or have a baby shower and ask for meals you can freeze! Now there's an idea!

Pork and beef meatballs, frozen raw. Then they can be fried and added to tomato sauce and spaghetti for a quick dinner.

I also freeze single portions of soups - really handy for good, nutritious lunches when you just can't be bothered to do anything else. I just made a big batch of the North African squash and chickpea stew from HFW's veg book with this in mind - it'll be wonderful once the weather starts getting more autumnal.

Oat pancakes! I made a big batch of these, stacked them with bits of greaseproof paper between them and froze. They are delicious. Just pop them in the toaster and server with greek yoghurt and fruit, or with butter and maple syrup.

Another one you can freeze is lamb tagine, you can even slow cooker it. Goes well with cous cous, so it's pretty effortless to serve.
