What do I do with jerusalem artichokes?

I got these in my organic box and have no idea what to do with them!

roast 'm or make soup

but eat only when not in polite company....they can produce a most unfortunate side-effect

Bung them into casseroles and soups tbh I'm sick of them now and have banned them from my box!
I think you cna grate them and put them into fritters/rissoles etc
Use them as a root vegetable I guess, mash with spuds etc...

I use them in soup, they make a lovely smooth starchy soup.

I parboil them, slice them, fry them, and put them with leaves and dressing to make a salad.

I grate them, mix with other root veg, and make latkes.

I roast them with other root veg.

Everyone talks about the farting. I have not noticed the farting personally. I think we're just such a farty family that a few more, thanks to a particular food, just don't get noticed.

I noticed it but interestingly, dh said he didn't fart anymore than usual (but I doubt anything could make him fart more)

I think we ate too many at once - make sure if you eat them neat (mashed or roasted) you only eat a few at once.

In the same vein, what can be done with celeriac? Got one today and still haven t eaten last week's. It is an ugly hairy bugger. I must put it on my Abel n Cole dislikes.

You must try it before you put it on your dislikes list! That's the rule!

Seriously, it's good mashed with apple and cream or yogurt. Very fluffy. (boil the celeriac for longer)

I also put it in latkes. Made them this week with celeriac and beetroot, and they came out lovely.

I have tried it. cubed it and roasted it, to general cries of eugh. My only absolute yuk on A&C is kohlrabi, which smells of drains and should only be fed to cattle. Really hungry cattle.

Oh, I like kohlrabi. I just eat it raw.

I don't think celeriac roasts very well. The mash really is nice, though, very fluffy.

My only A+C is ban is cauliflower. Can't stand the stuff.

my only dislike is beetroot (at the moment)

(although I have enough white onions to make around 10 vats of onion soup!)

Kohlrabi raw. YOu are hardcore.

What has cauliflower ever done to you? Have you tried it in a soup? you can make it quite creamy with milk then add sweetcorn for kid friendliness.

My other A&C dislikes are green peppers (they re just red peppers that need a proper holiday surely and are bitter) and parsnips (which are of no interest after xmas lunch) Oh and Kiwi fruit

I like kohlrabi, I don't eat it to be butch.

And beetroot is great juiced, with a fair bit of carrot and a touch of apple or orange maybe.

I haven't tried cauliflower soup. Also, there are some curryish ways to do it that look nice. I just have a bias against white food.

I would ban parsnips, but DH and the DSes like it. Also, it's good in latkes, and soups.

if I could ban a fruit it would have to be the dreaded clementines/oranges - not because we don't like them but I really think there is a limit to how many you can actually have every week!

I'm not quite obsessed, they're just really good with random root veg.

Grater attachment on a kenwood will absolutely do it.

Julienne is no good, but any big grater will be fine. (You don't need a fine grater.)

I got these in my box this week too and made Artichoke & Parsnip Soup which was delicious. Here's the recipe from Riverford.co.uk. I liquidised it with my hand blender. Riverford also has other recipes on their site for Jerusalem artichokes.

Preparation Time: 10 minutes
Cooking Time: 20-30 minutes
Serves: 4

Ingredients
2 medium onions (chopped)
3 tablespoons olive oil
2 medium parsnips (peeled and diced)
1lb Jerusalem artichokes (peeled and sliced)
4oz split red lentils
2 pt vegetable stock
salt and pepper to taste

Instructions

  1. Heat the oil in a large saucepan. Fry the onions until just soft.
  2. Add the parsnips and artichokes. Fry for 3 - 4 minutes, then put the lid on and sweat for 5 minutes, stir once or twice to avoid sticking.
  3. Rinse the lentils in a sieve then add to the vegetables with the stock. Stir well then bring to the boil.
  4. Boil for 10 minutes, then reduce heat to a gentle simmer. Simmer for about 25 minutes.
  5. Liquidise if preferred, then season to taste.
