Can anyone help with a low effort Indian vegetarian recipe for main course?

Ex MIL and ex SIL (who are Gujarati) are coming to stay at the weekend and I'd really like to cook them something lovely and veggie for Saturday night, pref that all of us can eat, including dd, who is 2.4 so the criteria are:

Vegetarian
No onions or garlic or eggs (they don't eat any but I could pos get away with a bit of garlic without offending, mil does eat it occasionally)
Doesn't take ages but up to an hour is ok
Not too spicy since dd and ds, who has bland tastes, have to eat it too but not utterly pathetic either. Dd and ds could have sometihng else if they didn't like it
I have plenty of spices but nothing that obscure, eg asofoetida, however you spell it!

I'm googling too but haven't come up with anything so far. If I get stuck I'll just do a veggie biryani without egg and onions but I'd like to be a bit more adventurous. TIA for any ideas!

Chick pea and pepper curry. Its not Indian I made it up but its mild.

Usually Id say fry onions and garlic but you could just do peppers, in spices eg garam masala, curry powder cumin coriander etc

Add tin of chopped toms and tinned chick peas, add water about half to one can, a little at time so you get a wateryish sauce. Add Mango chutney I usually bung in a whole jar but i have a really sweet tooth. Let it bubble for about half an hour or so, you'll know by the thickness of the sauce. Then add creme fraiche, again I chuck in a whole pot but you can have it as you like. sir in , buble for a bit and serve. This is deliciously sweet and creamy.

The only three I do are egg curry (so thats out!)
And either mushroom and chickpea, or sweet potatoe and chickpea - both easy and straight forward and no odd ingredients, but hardly 'authentic'...

Or, you could put onions, chick peas, spinach and red pepper together, with garam masala and a bit of stock. That would be fairly bland but colourful and nutritious. Serve it on saffron rice?

chickpea and potato curry..
Does have onions and garlic but I will post the whole thing and you can leave them out..
3 onions large chopped
8-10 cloves garlic
3 tins chickpeas
2 ib potatoes peeled and chopped
2 tbsp cumin seeds
2 tsp ground coriander
2 tsp turmeric
2 tsp mustard seeds
2 small green chillies
1 inch ginger root
2 lb tomatoes chopped
handful of chopped coriander leaves
3-4 tablespoons lemon juice
2 tbsp mango chutney
Saute onion and garlic if using in oil/butter. Add potatoes .toast cumin seeds in a small pan. Grind roghly using mortar and pestle. Add all spices to potatoes add ginger (grated) and chickpeas plus water/veg bouillon. Simmer for 15 mins. Add tomatoes coriander leaves lemon juice chutney. Simmer again for 15 mins to 30 mins. taste and add salt/lemon juice to correct seasoning

have a look here - they have some gujarati dishes. The Bateta Nu Shaak (Potato curry) doesn't have onions in it. Scroll down and look at the column on the right-hand side for the region. Smile

No idea why no onions, something to do with making you all fiery I think. I'm going to bottle it and do veg biryani because it's easy and I think the children will eat it too. Thanks though for all suggestions.
