What to do with left over whipping cream?

I have a pot of whipping cream that is reaching it's expiry date and needs to be used up. I'm meeting friends for a picnic tomorrow and would like to make something with it to bring to the picnic.

Should be easy to portion and eat without cutlery if possible. Any suggestions?

Make some shortcake biscuits. Wash and hull some strawberries, whip up the cream and store it in a tupperware. You can assemble strawberry shortcakes at the picnic and everyone will think you are a domestic goddess.

Bring babywipes for afterwards.

Or banoffee pie in a deep pie dish, so that the cream isn't higher than the pastry case. Blind bake pastry in a deep rimmed pie dish. Coat with caramel or crema de leche (carnation or nestles do it ready made in a tin. Slice not too ripe bananas on top, cover with whipped cream and grated choc or toasted chopped nuts.

i can think of an excellent use for whipped cream but you wouldn't want to do it on a picnic.

or maybe you would....Grin

What the others have said.

A choice between Eton Mess and.....well, using your imagination! Both good.

If you whip it you can freeze it.
