Those of you who cook sausages in the oven

...can you talk me through it? I'm doing cocktail sausages for dd's birthday party tomorrow. Would like to be able to put them in the oven with the sausage rolls so I don't need to stand over a frying pan when everyone is here.

So what do I put them in? An oven tray or dish? With or without lid? How long will they take?

I put them on an oven tray with a bit of a lip, as quite a lot of fat comes out. I usually put normal sized sausages in for about 25/30 mins at about 170 degrees (fan oven). Never used a lid.

Usually cooking instructions come printed on the bag.
You can cook them on a tray from frozen, In a fan assisted oven they take around 25 minutes, so half an hour in a conventional.

Or swiss roll type tray (you know - tray with sides so they don't roll out)

No lid - you want them to brown not stew iyswim?

Bung in oven and shake every so often

Another tip: If you line the tray with foil it makes the washing up much easier afterwards.

I use the Bacofoil release stuff on every tray I own.

Nothing sticks. Ever. It's magic.

Single layer in a roasting tin. I always put a bit of oil in the tin first, about 190 degrees and stir them around from time to time to get them brown all over.

so do they have to be in a single layer? I have a vague recollection of dsis putting a pile of them into a pyrex bowl and just stirring every now and again.

I would put them on an oven tray, probably 15/20 minutes depending on your oven, have a look after 10 mins or so and give them a shake around.

Should be fine, I always cook sausages in the oven, cannot remember the last time I fried one!

P.S. Sorry, I usually spear them all with a fork both sides too. Forgot that bit and thats important!

Get the bags of frozen ones from
Sainsbo's. Single layer on deep ish baking tray. No extra oil required. Bung in at 200 until at desired brownness. Tip into bowl mopping up excess oil with kitchen towel. Dollop each of whole grain mustard and honey. Toss.

Never fail to disappear at any party within 5 minutes flat. Grin

You shouldn't prick a sausage! I just put them on a lipped tray and cook for about 25 mins gas mark 5, turning every 5 minutes or so. Prefer them cooked slowly im a frying pan with a bit of olive oil though

One easy way to cook sausages in the oven is to skewer them on kebab skewers ( metal or bamboo). If you skewer them all you can turn them all to ensure they are cooked evenly without shaking oil everywhere or chasing them around the pan. Single skewer for cocktail.., double skewer for larger sausages - if metal is used it helps them cook through too

Ahhh someone beat me to it...was going to suggest squirt of tomato ketchup, squirt honey and few dashes of soy sauce and/or sweet chilli sauce...toss sausages so coated in mixture then bake as suggested. Fab for parties. Make sure you have plenty:-)

Mmm coated sausages sound yummy! Will do that for the next gathering. For tomorrow we are sticking with ketchup as I have just spent the afternoon battling with a birthday cake (the trial one turned out so well!) and scrubbing my house and now my weary pg body is collapsed in a heap on the sofa waiting for dh to get back with the Indian. No more party prep for me tonight! Is it wrong that I'm a teeny bit excited about cooking sausages in the oven for the first time though? Blush
