Mini fairy cakes/cupcakes in pampered chef tin - I need some advice please!

I have one of the mini muffin tins which I bought in a moment of madness at a pampered chef party. I thought I'd try baking some mini fairy cakes so, what I need to know is, can I just scale down a normal cake recipe? I made these the other day and they were lovely. Do you think they would work? If so, what would the cook time need to be? Also, do I need cake cases or can they just cook in the tin? From looking at the pampered chef website it looks like you can cook them without cases Can this be true?! Grin

You CAN use the same recipe! You also bake at the same temperature as the original recipe.

I would have a look through the oven door after about 2/3rds of the original cooking time, and if your little cakes already look risen and springy, then open the door quick-sharp and poke one of the cakes with a cake tester. Shut the oven door quickly with them still inside and inspect your cake tester (or skewer!) for claggy uncooked cake.

You can cook without cases, but if you have suitably sized cakes then that is easiest/fastest. If not, just lightly grease each cake 'dimple' and sprinkle in a tiny bit of flour, then tap away excess... having said that I'd propably just risk it!!

Hope they turn out beautifully.

Was going to say the same as forcookssake ! I made yorkshire puddings in mine once, we had over 50! I've done mini cupcakes too and didn't bother greasing. They turned out fine.

grapes anatomy, i always use 8,8,8 and 4eggs mixture makes 18 cupcakes and always always turn out fab, use creaming in method to get them light and fluffy, honestly they never fail me, i bake them on a 160 fan oven for 15-18 mins i always check after 15 though.
