I'm all over the seaweed sheets, rice, salmon and veggies but what is added to the rice to make it so tasty?

watching this as my ds7 loves it too. sorry i cant help but would love to know how the rice sticks together.

Think you need to add rice wine vinegar to the rice to season it and help make it sticky. Try these:

My daughter enjoys sushi and has made her own. She has this cookbook and there's a sushi recipe in there which she followed.

The recipe is for veggie sushi rolls. You'll need sushi rice, caster sugar, water, salt, seaweed sheets, rice wine vinegar, vegetables like cucmber or carrot and soy sauce for dipping. She enjoyed them very much.

The book I linked above I can recommend for children who are interesting in cooking as a first cookbook. The chocolate cake recipe in there is divine! :)

You need sushi dressing, which you sprinkle on to the rice after it's cooked (and then leave to steam with a tea towel between pan and lid for a few minutes so it goes fluffy). I get all my Japanese cooking stuff from here: Japan Centre. They sell big bags of sushi rice that work out cheaper than getting it from the supermarket - and they deliver, which is handy, out in the stick.

I buy Mirin for my sushi rice.

The secret to sushi rolls is clingfilm though - put a sheet over your bamboo mat, then you can twist it round the roll so it stays together better.

Once you've got the hang of it, they are dead easy to make with all sorts of fillings. I did chinese duck with hoisin ones for a party and they were all snaffled in minutes. And I take tinned tuna and avocado ones to picnics

Put a little Dashi (Japanese fish stock) powder in the cooking water. Next prepare a few tablespoons of hot rice vinegar which has had a teaspoon of sugar melted into it and keep in a small dish. When the rice is cooked, place into a large wooden bowl and cover with a tea-towel so that it stays moist. Slowly add the vinegar mixture, stirring slowly as you do and fanning it cool at the same time. This makes the rice sticky and glossy without the grains going to mush.
