Help! Need a foolproof rice crispy cake recipe please

The recipe I usually make tastes good but comes out rather sticky/collapsible, want to make some for a school cake stall (just started another thread for best recipes :) ) that will have a bit more structural integrity Grin

Melt some butter, a spoon full of syrup and 4 mars bars.

Mix in the rice crispies and then put a dollop in a case and set in the fridge.

You can use milky ways as well!

I make one which is fab, you make a layer of white chocolate mixed with rice crispy's, then put a layer of milk chocolate crispy's on top. Adults especially love it!

PissyDust, that sounds fab! How much butter do you use?

Housework - I've always done recipes with butter & syrup as well as the chocolate. DH can't have dairy and using just plain choc is a bit hardcore! (Marsbars fine for the cake stall tho as I'll making various things so can make something dairy free that he can eat some of.)

A second vote for mars bars,. An ounce of butter (solid butter not margarine) and an ounce of rice crispies for each mars bar you use, melt butter and mars bars, stir in rice crisps, squish into a tin,.done

Come to that the dairy free marge instead of butter is prob. why my usual recipe falls apart . . .

And it is the Mars bars which stick it together so it should work with stork. If not, it needs added toffees.

This is a recipe which DM got from a Rice Crispies pack, probably 40something years ago.

Cracklepops Biscuits:

Equal quantities of butter, marshmallows, toffee and rice crispies. Melt the first three in a big saucepan, then stir in the rice crispies. Press into a lined baking tin and cut up when cool.

Takes minutes, and is requested regularly for cake stalls etc.

Over the years I've tweaked the quantities. I now use less butter (it's nicer - no greasiness) and extra rice crispies (so it makes more squares and you can kid yourself that it's healthy now.)

So, I usually do
200g marshmallows
200g toffees
180g butter
240g rice crispies

You won't be disappointed. Smile

Mars Bars Rice krispy cakes are the business. Ds1 and i made some the other week but i think they were seriously fattening as we ended up using 16 Mars Bars and a shit load of butter, and only ended up with about 20 cakes! Is drooling at the memory

This recipe is fab from the BBC food website which I used for DS1 birthday. I do like the triangles against messing with the wrappers.

I disagree that its simple to just add chocolate. The percentage of chocolate to ricecrispes has to be correct and the right chocolate as once used high percentage chocolate and they were too bitter.

I didnt have enough mars bars when I did the above so I added more chocolate and a bit more butter.

Takver - yes, I have done it in paper cases a few times, but it's a bit fiddly as it's so gooey before it has set.

Chucking it in a tin is much quicker. Sometimes I melt a bar of chocolate and spread thinly over the top. Heaven. Smile

another vote for just keeping it plain, rice crispies or corn flakes, and melted chocolate is all i ever use. don't like them when they are sticky, ie the butter/syrup method.
