This week we are having:
-Curried red lentil stew with homemade naan
-sweet potato and cheddar quesadillas (recipe from another MNer) with homemade salsa, guacamole, sour cream, and a selection of raw veg
-roasted cauliflour mac and cheese
-asparagus with poached eggs and hollandaise
-spaghetti with green beans and cherry tomatoes in pesto with buffalo mozarella

I have the vegetable bible - its brilliant for inspiring veggie recipes I'd never normally go for.

Stir fried broccoli, garlic and chilli makes a a fab side. Butternut squash risotto is lovely (there are so many types of veggie risotto which are great). We have a lovely grated carrot and raisin salad earlier today. Or go indian - Madhur Jaffrey Curry Easy book has some brilliant, and v simple, recipes

Grilled asparagus. Season raw green asparagus with olive oil, salt, pepper, and either squirt of lemon juice or balsamic vinegar. Grill. Eat. Is v tasty.

right, I am tired, MN auto corrected cous cous to cows cows. I think thats all you need to know. Think aubergine, courgette, peppers, tomatoes etc roast in oven add to cows cows or pasta etc add some parmesan = dinner. HTH

One of my fave sides is from Hugh F-W.

Sprouts, cut in half then boil for 7 mins. When cool enough, quarter. Put in dish with S+P, double cream and grated nutmeg. Cover with breadcrumbs, dot with buttter. Bake about 20 mins (will easily cope with 30 mins).

Its by Sophie Grigson Chaos - our nanny got a copy she used to read at ours and used to do food for the boys which they loved, which gradually converted us over. Really lovely - and easy to do recipes - and she breaks the book down by wierdy veggies..

Carrot and raisin was a Nigel Slater recipe from BBC Food website - was (as far as can remember) grated carrots in a dressing with various herbs and spices mixed in oil and a handful of raisins chucked in at the end plus some mint - really lovely.
