Blanching veg to save money

Hi everyone!
So me and my dh have decided to embark on a healthy diet to lose some weight. The diet consists of alot of vegetables per week, I'm not keen on frozen veg so would prefer to do fresh. Also we are trying to save money so I'll be doing a weekly shop but fresh veg goes off quite quickly.
My plan is to blanch and freeze a week or months (not sure yet) worth of veg, but wondering how time consuming this is? Does anyone blanch and freeze their veg and is it worth the time?

Yes, we do this all the time with veg from the garden. Boiling water, drop in veg, fish it out when the water is back to the boil, spread out on a tea towel to cool before freezing, drop in the nest batch. Last lot of veg stays in the water and is cooked for soup.

Thanks for the reply! Do you do this in batches to store in your freezer and could it be done for up to a months worth of veg?

I don't like home-frozen veg because, unlike commercially-frozen, domestic freezers are too slow and the texture suffers. Instead, I have a very large fridge into which all vegetables go... leafy/tender ones get eaten first and the more robust ones like brassicas, runner beans, carrots etc are planned for the end of the week.

If you have a market near you (not talking a farmers' market - that'd hardly help to keep the costs down) then the produce is much fresher and keeps much better. It is also a lot cheaper, and you can buy what you need instead of what the supermarket dictates. Now I go to our local market weekly I feel utterly mugged off if I ever do buy fruit and veg at the supermarket. Not every area has a market though, I appreciate that.

Yeah I think buying a weeks veg and keeping in the fridge is my best bet...I will need to do a weekly shop anyway
