I have received a celeriac in my weekly vegetable box and would like some yummy recipies. I have some diced beef and wondered if I can meke a celeriac and beef casserole or similar.
Any ideeas would be much appreciated.

Never used it in a casserole but regularly have it mashed on its own,with mashed potato or I add a dollop of wholefgrain mustard.
You can also grate it and eat it like cloeslaw if you add mayo and wholegrain mustard.
Have also gratinated it.just love the stuff!

You can use in in a casserole - just chop it into chunks and sling it in. You can also mash it, and as thirtysix says it's lovely as a gratin. It's also nice roasted in the oven with other root veg like carrots and parsnips - parboil, sling into a roasting tray, drizzle with olive oil and roast for about 30 minutes.

Celeriac Salad

Grate it all up in a mixer. Make a dressing from:

1tblsp yoghurt
1tblsp creme fraiche
1tsp mustard
1 tblsp each of gherkins, capers,anchovies,fresh parsley(all chopped)
3 tbsp olive oil
1 tblsp w wine vinegar

Mix all together. Its really scrummy especially with smoked salmon. Measures are a bit approx so just experiment to taste.

It makes a fantastic soup. Chop it up and fry in a bit of olive oil or butter. add (a pint or so?) of veg stock, lemon or orange zest and juice, simmer and blend. Really nice.

Jamie Oliver does fantastic recipe called "smashed celeriac" or something - cut into cubes and fry in pan with garlic & thyme, then add a bit of stock (that marigold swiss veg stuff is very good) and simmer for 20 mins. I usually do with with 2 different types of root veg: potato & celeriac, potato & swede; celeriac & jerusalem artichoke etc etc.

I've just got "red russian kale" in my veg box today. Now I'd love to know what to do with that!!

Bramshott as for the kale just slice into curly kaley riboons and steam for a couple of minutes. Season and serve. It has a gorgeous sweet and nutty taste all of its own. My kids love it believe it or not. 'More kale mum. I want MORE kale'. Grin Music to my ears.

Two of my kids hate celeriac with a vengance though, sadly.
I try to hide it in mash potato by using three quarters spud to a quarter celeriac.

I do it as mash, with apple and some yogurt or creme fraiche.

This week, I think I'll make latkes with it, and the beetroot. Comes out very nice, although it involves more grating than I like.

We got Kohlrabi in ours today. Usually I do the same recipe as the celeriac salad (as mentionned earlier), but has anyone got any good alternatives?

As for the Kale...what about steamed & then baked with aclove of garlic & some grated gruyere?
