Chicory? Salad?

I have chicory. Can I just make a salad with it? What sort of dressing works?

This is a really pathetic question, but do I just leave the leaves whole? Or what? I always find them really unwieldy ...

I just cut it into disks like you would a cucumber - then eat all the hearts myself to aviod everyone else saying yuk. Ordinary vinaigrette is nice with it.

Oh, disks. That would work. I'll try that.

I think the leaves look lovely, and really crispy and nice, but they're just a hassle to eat in a salad that way.

also disks hide the fact that you have put in a lot of chicory thereby minimising kvetching

I like chicory. It has a nice tangy flavour.

And actually, my DS1 now likes leafy salads, so it should be fine ... I hope ... maybe I'll make croutons, too, though. Those are always a hit.

I love chicory salad, I have it with apple, they match really well. I make a balsamic vinegar dressing. I slice the leaves.

I did disks, and it all fell apart into little c-shaped slices of chicory, looked good. Mixed it with tomato, yellow pepper. And then put fried onions, pancetta and a bit of croutons (which came out wet, whoops) on top, with a bit of balsamic vinegar.

It came out very well.

I'll try apples another time, I could see those two working well together.

Here is my favourite chicory recipe -

Serves 4

3 small chicory washed,halved and cut into thin slices
1/2 a bunch of spring onions cut into 5cm bits
packet of mange tout cut into small stips
2 sticks of celery cut into stips
50g of fresh ginger peeled and shreded
2 cloves of garlic thinly sliced
2 limes (the juice and zest of)
2 tbsp of honey
1 tbsp of sesame oil
200g of cooked prawns
25g of roasted peanuts

Arrange salad (ie celery, chicory,mangetout and onions) prawns and peanuts on plates. Whisk
other ingredients together and pour over each plate.
