Quick help needed with canapes/starters..

I have agreed to bring the canapes/starters to a school parents function for around 30 guests at the PTA Chair's house. Nightmare.... and a bit stupid of me given that I am working all day tomorrow and all day Saturday and will have about 2 hours to get anything sorted between now and Saturday night (when we go).

I need foolproof ideas that are incredibly quick but don't look like I haven't tried at least a bit! They will be transported by car so relatively portable - and I suppose I need to do two sorts (one which is a veggie option).

IDEAS PLEASE WISE-ONES....

I would do crostini with a couple of different toppings which you can put together quickly when you're there. Google for lots of different ideas for toppings.

My thought would be to do some crostini type things - so very thinly slice something like a french stick and put in the oven on a baking sheet to make them crunchy, then get imaginative with the toppings.

Ones I've used include:
brie (or goats cheese) with a sweet onion chutney (or other similar)
smoked salmon sat on cream cheese (or sour cream) - if you use the packs of "scraps"/"offcuts" from the supermarket they aren't expensive
pate (maybe with a different chutney) (I've also done a home-made smoked mackeral pate - equal weight smoked salmon and light cream cheese, beat until smooth, add squeeze of lemon juice and some finely chopped dill, chill for few hours).

Mini tartlets are also good - premade short-crust pastry then vary the insides:
goats cheese/cherry tomatoes/asparagus etc

Packet of puff pastry, jar of caramelised onion (or similar relish), some grated mature chedder and a mini muffin/patty tin (the smaller the better).

Roll pastry in to balls and squish into the bottom of the patty tins with your thumb, spoon in about a teaspoonful of relish and sprinkle cheese over the top.

Cook for about 12 mins on number 7 (until pastry is cooked)- and voila - scrummy cheese and onion bites. They taste better than they look!

I do this with cherry tomatoes, a sprinkle of garlic powder and cheese too.... so if you really want to impress you can do both.

veggie option - you could do marinated feta and olives.

non-veggie - sticky cocktail sausages

Both could be prepared in advance, cocktail sausages could be cooked while your getting ready.

  1. Sainsbo's taste the diff cheddar cheese crispies, each one top with a small blob of Branston tomato and red pepper relish, top that with a thin slice of good quality mature cheddar cheese and sprinke over some hot paprika. A friend did this, it looks so smart and tastes really yum, especially given its fairly basic ready-made ingredients.

Mary berry's boursin appetizers - thin french bagette, sliced thinly (1cm, or just under), butter (real butter) both sides of the slices of bagette, spread a good blob of Boursin (garlic and herb) on one side, top with a little grated cheddar (optional) and a pinch of paprika. Bake at 180C for 10min. Tastes soooo moreish and looks like a much more complicated 'recipe' than just bread and cheese!!!
  1. hot Stilton bites - ready-rolled puff pastry, cut into bited sized squares or rounds. Crumble some stilton in the middle, grated Parmesan, pinch of poppy seeds (not essential) and bake at 220 for 10min.
  1. Can't beat cocktail sausages - bake for 10min then add some wholegrain mustard and honey (equal quantities, but amount would depend on how many sausages - want them fairly thickly coated) and bake for another 5-7min.
