what is your t and t flat jack recipies?
i cant seem to make chewey but not too buttery ones.

Here's mine:

300g Butter
340g demerara sugar
4 heaped tbsps golden syrup
1/2 tin of condensed milk
500g rolled oats can be cheap ones.

Preheat oven to 160C

Line a baking sheet (swiss roll tin is ideal) with baking parchment - doesn't need to be neat, or even greased as long as you use parchment. Put sugar, butter and syrup into a pan over a medium heat, stirring constantly to stop it catching. Make sure butter is melted, but don't worry if the mixture is separated.

Take pan off the heat, pour in condensed milk. Stir until combined. Stir in rolled oats.

Empty mixture into lined baking tin - roughly distribute it evenly - it levels out pretty well if roughly in the right place - certainly no need to press it down.

Put in the middle of the oven for 10-15 minutes or until lightly golden brown. Allow to cool in the tin. Cut into pieces.

Mine is a Two Fat Ladies one:

175g / 6oz demerara or dark brown sugar
175g / 6oz butter
225g / 8oz rolled oats
pinch of salt

Melt the sugar and butter together in a saucepan. Mix in the oats and salt. Pour the mixture into a parchment lined 20x30cm / 8x12in tin (pref. non-stick) and press firmly down to flatten evenly.

Bake in the centre of a pre-heated oven at 180C/350F/Gas 4 for 15-30 mins (depending on your oven). Cut into 16 pieces and allow to cool in the tin.

Mine have always ended up chewy, but you can substitute half of the sugar for condensed milk if you want chewier again.

You need Soupdragon's famous Mumsnet flapjacks. Brilliant. Now my standard flapjack recipe after many years of failed, crumbly or rock solid flapjacks. Recipe below is Soupdragon's words from a previous post of hers.

250g porridge oats (the cheap type, not large ones),
150g Butter,
2 generous table spoons Golden Syrup
half a tin condensed milk,
tablespoon or so demerera sugar (optional)

baking tin, no bigger than about 18cm x 28cm

Method:

  1. Preheat the oven to 160 degrees c
  1. Line the baking tin with baking parchment.
  1. Melt the butter in a large saucepan over a medium heat and add the sugar and syrup. Keep gently heating and stirring until all is melted and mixed. If it starts to boil take it off the heat!
  1. Add the condensed milk and mix. Bring to the boil for about a minute.
  1. Remove from the heat and gradually add the oats, folding them in. All the oats should be coated, and the mixture quite dense, but still sticky. Don't add so many oats that the mixture becomes dry.
  1. Pour the mixture into the tins and spread about so that it lines the tin to a depth of 2-3cm. Don't squash the mixture in, just spread it evenly.
  1. Bake in the oven for about 15mins. You should take them out when they just start to go brown round the edges, don't leave longer than this. If they're still squidgy in the middle that's fine, they set on cooking.
